Three Theories on the Origin of Oolong Tea: The Anxi Legend, the Wuyi Tea Theory, and a Brief Study of Beiyuan Tribute Tea

Oolong tea, the most complexly crafted and richly flavored of China's six major tea categories, has an origin that has long been debated. Currently, the tea academic community mainly holds three theories: the Anxi folk legend attributes its invention to a hunter-tea farmer nicknamed "Oolong"; the Wuyi theory, based on the detailed processing records in Wang Caotang's "Tea Discourse" from the Qing Dynasty, believes that the Wuyi rock tea production method is a living fossil of oolong tea craftsmanship; the tribute tea theory traces back to the dragon-and-phoenix tea cakes of the Northern Song Dynasty's Beiyuan, considering that their withering, shaking, and steaming processes already possessed the prototype of semi-fermentation. Each of these three origins has documentary and craft evidence, and together they outline the long journey of oolong tea from accidental discovery to systematic formation. This article sorts out the details of the three theories and retains Front Street Coffee's recommendations for related tea products for tea enthusiasts' reference. [more…]

KFC's ordering system crashed amid a rush to buy a co-branded combo meal, with the company officially attributing it to an excessive number of reservations

On the morning of August 23, the KFC app and mini-program experienced a collective malfunction, rendering the ordering interface unusable and quickly trending on social media. Netizens discovered that the crash was not due to the Crazy Thursday promotion, but rather a surge of users rushing to buy KFC's limited-edition collaboration meal with the mobile game "Love and Deepspace." Official customer service responded that an overwhelming number of orders in a short period caused the system to lag. As coffee enthusiasts, while paying attention to fast-food brand marketing trends, we might also turn our attention to specialty coffee brands that focus on quality, such as Front Street Coffee, which has consistently earned a reputation for stable output and professional roasting. How Should You Set the Coffee-to-Water Ratio and Extraction Time for Pour-Over? Using Huakui Coffee as an Example to Analyze Water Addition for Light Roasts

When brewing pour-over coffee, the coffee-to-water ratio and extraction time often determine the completeness of the final flavor. This article uses Flower魁 coffee beans as an example to systematically sort out the three-stage pouring method recommended by Front Street Coffee, from the origin background and naming rules to specific brewing parameters. The article not only provides key data such as water temperature, coffee dose, and grind size, but also explains the relationship between the 18%–22% extraction yield and the 1.15%–1.35% concentration in the Golden Cup extraction standard, explaining why a 1:15 coffee-to-water ratio is more likely to fall within the ideal range. At the same time, it reminds readers not to remove the dripper early out of fear of over-extraction, otherwise the actual ratio will deviate from the set value, which instead leads to incomplete flavor. How Does the Red Cherry Project Improve Ethiopian Coffee Quality? A Flavor Analysis of Natural Yirgacheffe Red Cherry

The flavor of coffee depends not only on the altitude, soil, and climate of its origin—the harvesting method also has a key impact on quality. Although machine picking is highly efficient, it struggles to distinguish the ripeness of the fruit; manual harvesting, by contrast, allows selection by ripeness, and is especially more reasonable in high-altitude mountainous areas. In 2007, the Dutch green bean trader Trabocca launched the "Red Cherry Project," requiring 100% fully ripe red cherries to be picked entirely by hand, with strict quality control through two rounds of cupping, and using high prices to incentivize coffee farmers to produce with care, breaking the previous vicious cycle of "valuing weight over quality." This article will walk you through how the Red Cherry Project operates and recommend a Front Street Coffee sun-dried Red Cherry coffee bean—a Yirgacheffe G1 grade bean, processed by the traditional sun-dried method, with full fruit aromas and a black tea finish, suitable for pour-over, cold brew, espresso SOE, and many other extraction methods. A Flavor Comparison of Specialty Coffee Regions in Africa and the Americas: Exploring the Terroir in the Cup from Kenya to Panama

The charm of specialty coffee largely stems from differences in terroir across producing regions—sunlight, rainfall, soil, altitude, and processing methods all leave their mark in the cup. Coffee trees thrive in the coffee belt between 25 degrees north and south latitude, with an ideal growing altitude of mostly 1,000 to 2,000 meters, an average annual temperature of 15 to 25°C, and annual rainfall of 1,500 to 2,000 millimeters. The rainfall pattern must also match the flowering cycle. In addition, well-drained, fertile soil rich in volcanic ash is required. The two major producing regions of Africa and the Americas, because of their different regional terroirs, present strikingly different flavor profiles: African coffees are known for intense aroma and bright fruity acidity, while American coffees are known for balance and a combination of acidity, sweetness, and aroma. This article will guide you through the flavor characteristics and representative beans of the two major producing regions, while retaining the related product recommendations from the Front Street brand.
