Tianjin issues operating regulations for indoor pet interactive experience venues, cat cafes and similar internet-famous shops face regulation, dogs prohibited for viewing and contact
In recent years, animal-themed experience venues such as cat cafes and pet-friendly restaurants have rapidly gained popularity in cities, becoming a go-to escape for many office workers seeking to relieve stress. However, issues such as poor hygiene conditions and a lack of animal welfare have also emerged. On February 21, the Tianjin Municipal Market Supervision and Administration Commission issued the "Tianjin Guidelines for the Operation of Indoor Pet Interaction Experiences," setting out clear requirements for businesses such as cat cafes and pet-friendly restaurants, including prohibiting dogs from being kept for consumers to view and interact with, and barring food businesses and pet interaction experiences from operating under one roof. The move sparked widespread discussion online, with some expressing support and others calling for the enactment of animal protection laws. Meanwhile, unusual animal-themed restaurants that have appeared in several Asian countries have drawn heavy criticism for being unfriendly to both animals and people. Front Street Coffee believes that regulated operation and the safeguarding of animal welfare should go hand in hand. [more…]

Comparing Ice Timing for Iced Pour-Over Coffee: Ice First or Ice Last? A Detailed Guide to the Differences and Experiment Conclusions
Should you add ice first or ice last when making iced pour-over coffee? This question may seem like a mere difference in procedure, but behind it may lie the preservation and release of coffee flavors. Front Street Coffee once mentioned the Paragon ice ball in an article; its principle is to lock in volatile aromas by rapidly cooling the coffee liquid, allowing the drinker to experience a richer coffee flavor. Inspired by this, we restarted the experiment, using the same Colombian Frontera Estate washed Geisha, to compare the differences between adding ice first and adding ice last in iced pour-over coffee in terms of operation, temperature, aroma, and taste. The experiment strictly controlled the ratios of coffee grounds, water, and ice, and corrected for differences in tasting time. What was the final result? Is there really an obvious difference between the two? This article will reveal the answer for you. [more…]

The New Secret to a Coffee Shop's Standout Success: How Restroom Details Become a Key Bonus in Customer Experience
Besides refreshing the mind and waking you up, coffee can also promote intestinal peristalsis, which unexpectedly makes the restroom experience an important standard for judging whether a coffee shop is comfortable. Recently, a netizen from Shandong posted on social media, reviewing some of the coffee shops they had visited from the perspective of the restroom, with a unique angle and rich details. Cleanliness and hygiene, along with smooth flushing, are the basics, while spaciousness and ventilation, pleasant aromas, and the provision of disposable toilet seat covers, wet wipes, sanitary pads, and hand cream become bonus points. A layout with dry-wet separation and a reasonable flow also greatly increases favorability. At the same time, many coffee shops cannot provide restrooms due to space or plumbing limitations, or they impose restrictions on customers using the toilet. Those shops with complete facilities not only meet physiological needs, but also win repeat customers and reputation through detailed service. Front Street Coffee reminds us that paying attention to these often overlooked experiences may bring coffee shops an unexpected win-win effect. [more…]
Analyzing the Timing of Pauses in Three-Pour Hand-Brewed Coffee: An Extraction Comparison Experiment Between Waiting for the Bed to Drain and Re-Pouring at the Halfway Point
In the three-pour method for pour-over coffee, the timing of the third pour is often overlooked—should you wait for the coffee liquid to completely drain before pouring, or should you top up promptly once the water level drops by half? Front Street Coffee conducted two sets of comparative experiments, using Costa Rica Strawberry Candy and washed Yirgacheffe beans respectively, to analyze in depth the practical differences between the two pouring methods from the dimensions of aroma, flavor, extraction time, and coffee bed state. The experiments revealed how the timing of the pour affects the temperature of the coffee bed, fine migration, and the final flavor performance, while also explaining why beans of different hardness show completely different results when faced with waiting for the liquid to drain. This article will present the full experimental process and conclusions to help coffee enthusiasts understand the core logic of judging when to pour in the three-pour brewing method, and provide Front Street's practical recommendations. Starbucks member night events offer uneven experiences, with Gold and Diamond users complaining about big gaps in store execution.
Starbucks recently launched a Happy Holiday Member Night event for Gold and Diamond members, allowing eligible users to book free in-store participation through the official App. However, after the event ended, a large number of feedback posts appeared on social platforms, with many members calling the experience extremely poor: the new product tasting consisted of only one mini drink, limited-edition badges were in short supply, the coffee lecture and interactive games were simply canceled, and there were no discounts on merchandise purchases either. Some participants also pointed out that the quality of the event varied by store, and stores that attached greater importance to it still delivered a decent holiday experience. Starbucks employees, meanwhile, revealed that rushed preparation, insufficient bookings, and last-minute situations could all dilute the effectiveness of the event. Why did this member event receive such polarized reviews? This article will sort through feedback from all sides and the reasons behind it. [more…]
What espresso tamping pressure is actually appropriate? Experiment reveals the relationship between grind size and tamping force
Tamping is a step in espresso making that seems simple but is full of subtle knowledge. Baristas have different understandings of tamping: some believe a light press to level the grounds is enough, while others are used to pressing down with full force. So, does tamping pressure actually affect the extraction result? Front Street Coffee conducted two sets of comparative experiments, using coarse-ground and fine-ground coffee powder respectively, and observed the changes in extraction time after tamping with different pressures. The experiments revealed a key rule: the effect of tamping pressure on extraction is not fixed, but is closely related to the coarseness of the coffee grounds. This article will take you deeper into the true role of tamping, the differences in understanding among different schools of thought, and how to flexibly adjust tamping pressure according to grind size, so that every cup of espresso is more stable and outstanding. Can Blended Coffee Beans Be Used for Cold Brew? A Detailed Guide to Cold Brew Ratios and Practical Experience
In the heat of summer, a refreshing glass of cold brew is the go-to choice for many coffee lovers looking to beat the heat. But have you ever considered that coffee beans blended from two or more varieties can also produce an outstanding cold brew? Cold brew, due to its low-temperature, long-duration extraction, has a richer, smoother mouthfeel, yet its floral and fruity notes gradually fade with storage time. This article draws on the hands-on experience of Front Street Coffee, first outlining the characteristics of cold brew and the advantages of blended beans, then recreating several blending experiments one by one: from Sidra with Geisha, Pacamara with Red Cherry, to Huakui paired with Strawberry Candy and Wangshan Geisha, and finally challenging the dark-roasted Queen's Estate blended with Flower God. Some of these recipes are full-bodied and layered, while others flop into a "mask of pain," yet they perfectly showcase the fun and possibilities of blended cold brew. [more…]
Coffee Flavor Experiment: Can a Pinch of Salt Neutralize Bitterness and Improve Flavor Balance?
What should you do if your coffee is too bitter? Some people suggest that adding salt can improve the taste. In this article, through a controlled experiment with Mandheling coffee, we tested the effects of three different amounts of salt—0.01g, 0.02g, and 0.03g—on the coffee's flavor. The results showed that 0.02g of salt balanced the bitterness and saltiness, enhanced the body, and made it easy to drink; while 0.01g still had a pungent taste, and 0.03g was too salty. The experiment showed that adding salt can indeed mask bitterness to a certain extent, but similar to the bypass method, it is mainly suitable for rescuing extraction mistakes or coffee that is about to go wrong. If the coffee itself is perfectly extracted with balanced acidity and sweetness, adding extra salt will instead disrupt the flavor balance and artificially create negative tastes. [more…]
Flavor Experiment with Low-Temperature Slow Extraction: Differences in Cold Brew Across Different Processing Methods
The most fascinating thing about cold brew is that it works like a slow-motion projector: the flavor release that hot extraction completes in a few dozen seconds is stretched out over more than ten hours, and the character of every flavor compound is amplified and put on display. Running a set of cold brew comparison experiments with beans processed in different ways lets you directly see how each processing method truly expresses itself at low temperatures. The experiment is set [more…]
Coffee Tasting Time | How soon after brewing is it best to finish a pour-over coffee? What changes in the coffee flavor of a pour-over coffee the longer it sits?
The peak flavor period refers to the optimal window for tasting coffee beans after roasting is completed. During this time, because there is not too much carbon dioxide interference, and the coffee's flavor compounds have not yet been lost in large amounts, we can brew coffee with the richest aroma and obtain the most complete flavor experience. But did you know, [more…]

The Third Wave and Specialty Coffee: A Complete Interpretation from Supply Chain Transformation to Customer Experience
Over the past decade or so, the coffee industry has developed rapidly, and the third wave of coffee has led more and more consumers to pay attention to specialty coffee. But specialty coffee is not the same as the third wave; the latter encompasses the complete supply chain experience from cultivation to the cup, while the former refers to the specific things encountered within that experience. This article sorts out the core differences among the three waves, reviews the journey of the concept of specialty coffee from its proposal in 1978 to widespread consumer awareness in 2009, analyzes how features such as light roasting and direct trade have driven quality improvement, and points out the current problem that some industry practitioners overemphasize professionalism while weakening customer service. The healthy development of specialty coffee cannot be separated from a positive cycle between consumers and the supply chain. [more…]
Coffee Brewing Water Blending, Paragon Ice Ball, and Tasting Cup Stacking Effect Test: Front Street Coffee Huakui Blind Test Comparison
When brewing coffee, water quality, cooling methods, and tasting cup types are often treated as independent variables, but can combining all three lead to more significant sensory improvements? Front Street Coffee designed a controlled experiment using Huakui beans as samples: one group used regular mountain spring water, no ice ball, and a standard espresso cup, while the other used a custom water concentrate, a Paragon ice ball, and an aromatic tasting cup, with completely identical brewing parameters. Through concentration measurements and blind tasting, the actual contributions of these tools at different stages were verified. This article documents in detail the TDS control of the custom water concentrate, the cooling mechanism of the Paragon ice ball, and the aroma-concentrating effect of the tasting cup, and invited colleagues and customers to participate in a blind selection. The final results were highly consistent, providing coffee enthusiasts with a reproducible reference for combined techniques. [more…]
Ice Cube Dosage and Coffee-to-Water-to-Ice Ratio Tips for Iced Pour-Over Coffee: Looking at the Difference Between Aged Ice and Young Ice from Front Street Experiments
When making iced pour-over coffee in summer, the most agonizing decision is often not which beans to choose, but exactly how much ice to throw in. Too little ice and the coffee turns lukewarm; too much and it becomes thin as water. A slight deviation in ratio and it's easy to mess up. This article focuses on the two core functions of ice in iced pour-over—cooling and dilution—breaks down the reasonable ratio range among coffee grounds, water, and ice, and shares a comparative experiment about old ice versus young ice. The experiment uses 15 grams of Emerald Estate Green Label Geisha with a Hario V60 dripper, revealing through actual testing how freezing time affects ice hardness and melting speed. If you also want to consistently make a cup of iced pour-over at home with moderate strength and lasting chill, the following content is worth reading to the end. [more…]
How Does Cup Temperature Affect Coffee Flavor? A Comparative Experiment on Preheating vs. Chilling a Pour-Over Coffee Cup
Coffee aroma is volatile, and the higher the temperature, the faster it dissipates, so some have proposed using low-temperature containers to lock in the aroma. Front Street Coffee compared three types of pour-over coffee vessels—a high-temperature cup, a room-temperature cup, and a frozen cup—to test whether cup temperature truly affects coffee aroma and flavor performance. The experiment used Kenya Asaliya coffee beans with uniform brewing parameters, and the results showed that cup temperature mainly changes the temperature of the coffee when it enters the mouth, rather than the amount of aroma, but temperature differences do indeed cause noticeable changes in flavor perception. This article will present the experimental process and conclusions in detail, and offer cup selection suggestions for different weather conditions. [more…]
Can Coffee Still Be Reheated After It Cools Down? Front Street’s Real Tests with Pour-Over and Flat White Reveal the Truth About Taste
When the weather turns cold, coffee cools down especially quickly, and many customers ask: can it be reheated? Before answering this question, we need to first understand what actually happens after coffee cools down. Temperature affects how the taste buds perceive sourness, sweetness, and bitterness, and it also causes volatile aroma compounds to gradually dissipate. This time, Front Street Coffee specifically conducted a comparative experiment, leaving a light-roast pour-over and a medium-dark roast Australian white to cool separately before reheating, to see just how big the difference is between the rewarmed coffee and coffee that is freshly made or fully cooled. The experimental results can help you make a more rational decision in winter about whether this cup of cold coffee is really worth reheating once. [more…]
How Does Filter Paper Fit Affect Coffee Extraction? A Comparative Experiment Between V60 and KONO Reveals Flavor Differences
Wetting the filter paper before brewing coffee is almost a standard step for all pour-over enthusiasts, with the usual goals of making the filter paper fit snugly, removing paper dust, and, if hot water is used, warming the cup along the way. However, most tutorials rarely discuss in depth how much the degree of fit between the filter paper and the dripper actually affects the final taste. Front Street conducted two sets of controlled experiments, using V60 and KONO drippers respectively, paired with filter papers in different states of fit for brewing, and tasted and compared them one by one. The experiment used the floral-fruity Front Street · Gedin Gedin and the nutty-sweet Front Street · Brazil Red Bourbon, and the results showed that a poorly fitting filter paper significantly changes the flow rate, which in turn affects the extraction yield and concentration, producing noticeable differences in mouthfeel.
