Can Salt Fix Bitter Coffee? A Mandheling Taste Test

Does Adding Salt to Mandheling Coffee Reduce Bitterness?

A controlled test with Mandheling coffee compared 0.01g, 0.02g, and 0.03g of table salt. At 0.02g, bitterness and saltiness balanced, body improved, and the cup was easy to drink. At 0.01g a pungent edge remained, and at 0.03g saltiness took over the taste completely, so the fix works only within a narrow range.

Salt masks bitterness to some degree, much like the bypass method, and suits coffee that failed extraction or is on the verge of going wrong. When a cup already has balanced acidity and sweetness in coffee, added salt breaks that balance and creates off-flavors. Seasoning is therefore a rescue, not a default step.

What to do if your coffee is too bitter? Some suggest adding salt can improve the taste. This article tests the effect of three different amounts of salt—0.01g, 0.02g, and 0.03g—on coffee flavor through a controlled experiment with Mandheling coffee. The results show that 0.02g of salt balances bitterness and saltiness, enhancing body and making it easy to drink; 0.01g still leaves a pungent edge, while 0.03g makes the saltiness overpowering. The experiment shows that adding salt can indeed mask bitterness to some extent, but similar to the bypass method, it is mainly suitable for rescuing a failed extraction or a coffee on the verge of going wrong. If the coffee itself is perfectly extracted with balanced acidity and sweetness, adding extra salt will instead disrupt the flavor balance and artificially create off-flavors.

After adding 0.01g of table salt to Mandheling, the bitterness was somewhat reduced, but the overall cup still had a strong pungent edge. When the salt amount was increased to 0.03g, the coffee's bitterness disappeared entirely, but the saltiness became strikingly prominent, shifting the taste focus from bitter to salty—though it was a different flavor, the experience was still unpleasant.

Only the cup of Mandheling with 0.02g of salt achieved a balanced taste—neither strong bitterness nor jarring saltiness, smooth on the palate, with a noticeable boost in body.

The experimental results show that table salt can indeed alleviate coffee's bitterness to some extent. However, this approach is similar to the bypass method mentioned in a previous article—essentially a remedy for coffee that has already failed or is about to fail extraction, where adding salt makes the taste better.

If the coffee itself is perfectly extracted, with full aroma, harmonious acidity and sweetness, and no off-flavors, then adding salt will only break the original balance and artificially create unpleasant tastes. Therefore, adding extra seasoning still depends on the preconditions.
