Artificial Intelligence Electronic Nose Unveiled: Precisely Distinguishing Coffee Flavor Differences Using Sensor Arrays and Algorithms
For baristas, the senses are the tools they rely on for their livelihood; once they catch a cold and their nose is blocked, they have no way to judge the quality of that day's output. A research team in Taiwan combined artificial intelligence learning algorithms with an electronic nose to develop a system capable of distinguishing differences in coffee aromas, with recognition accuracy reaching 81% to 98%. This technology is not only expected to help coffee professionals maintain quality control when their senses fail, but may also be applied to quality verification across the coffee industry chain. At the same time, the research team is also developing an electronic tongue, electronic eye, and tactile system in parallel, attempting to cover every link in coffee quality control from multiple dimensions. Will baristas be replaced by machines? A standard analysis of water temperature, grind, and ratio for pour-over coffee
There are countless pour-over coffee brewing methods, but the core variables that truly determine flavor are simply grind size, water temperature, and the coffee-to-water ratio. Yet these seemingly simple parameters and circular pouring make it hard for many people to consistently reproduce a good cup of coffee. Machines are naturally superior to humans in consistency—does this mean baristas will eventually lose their jobs? Front Street has a bold prediction: mechanized production roles may be replaced, but baristas who truly understand brewing logic will move behind the scenes, responsible for formulating and adjusting plans. This article starts from standard brewing methods and explores the relationship between technique, understanding, and the future of baristas. [more…]
JDE Peet’s Partners with Enveritas to Launch Global Deforestation-Free Coffee Program Covering Four Major Coffee-Producing Countries
The EU introduced the EU Deforestation Regulation (EUDR) in June this year, strictly prohibiting the sale of commodities linked to deforestation in the EU market, with coffee explicitly included. The regulation requires operators to conduct due diligence on the origin of goods to prove they are not associated with deforestation or forest degradation, or they will face fines or even export bans. The regulation will take effect from the end of 2024 to early 2025, and countries and coffee companies are actively responding. Global coffee giant JDE Peet's recently announced that it has signed memorandums of cooperation on deforestation-free coffee with coffee-producing countries such as Vietnam, Ethiopia, Papua New Guinea, Tanzania, and Uganda, and is using Enveritas' satellite imagery, AI, and on-the-ground verification technology to ensure that coffee does not come from deforested land while protecting the interests of smallholder farmers. This move is highly consistent with the new EU rules and also provides a reference for a sustainable supply chain for brands of interest to coffee enthusiasts, such as Front Street Coffee. [more…]

Ordering through mini-programs is quick and convenient, and you can even get coupons, but once you place a wrong order and want a refund, you may run into obstacle after obstacle. Recently, a blogger mistakenly ordered 17 cups of coffee through the Luckin mini-program. Within one minute, they tried to cancel, only to find that the mini-program did not display the store’s phone number, while the headquarters customer service kept passing them back and forth through an intelligent robot. In the end, they had no choice but to bear the loss themselves. This incident struck a chord with many netizens, and quite a few shared similar experiences. Consumers are calling for store contact information to be made public or for the self-service refund function to be improved, while Luckin staff also said that stores cannot directly process refunds and that the procedure is cumbersome, expressing hope that the system can be optimized.
