Since its introduction in 1933, the moka pot has become the most accessible choice among espresso coffee tools thanks to its distillation-style extraction with a heated base. It uses steam pressure from the lower chamber to push hot water up into the upper chamber, producing coffee that is intense, with intertwined acidity and bitterness and a layer of oils. This article will give a complete introduction to making a cup of moka coffee with a moka pot, from equipment preparation and coffee bean selection to brewing details. At the same time, using Front Street's Golden Mandheling as an example, it explains how fresh roasting, wet-hulling processing, and medium-dark roasting together shape Mandheling's classic rich flavor, helping coffee lovers produce consistent results at home.

The moka pot was born in 1933, and its inventor was the Italian Alfanso Bialetti. It relies on base heating to complete brewing and is essentially distillation-style extraction. Among various espresso coffee tools, it is the most affordable and is also widely used in Italian households daily.

How do you use a moka pot to brew coffee? The principle of moka pot coffee extraction is not complicated: after the lower chamber is heated, steam pressure is generated, and when the pressure is sufficient to penetrate the coffee grounds layer, the hot water is pushed up into the upper chamber. The coffee obtained this way has a strong mouthfeel, with both acidity and bitterness present, and also carries oils.

The tools needed are: a moka pot, a gas stove with a stand or an induction cooker, coffee beans, a grinder, and water.

First prepare a bag of freshly roasted Golden Mandheling coffee beans

Before brewing, Front Street will first check the freshness of the Golden Mandheling coffee beans. If the roast date is more than a month past, Front Street will not use them for service. Coffee beans have a best-tasting period after roasting, and the aroma will dissipate faster with storage time. Flavors that have already dissipated are very difficult to bring back during brewing. This is also why Front Street only ships coffee within 5 days after roasting, hoping every customer can drink coffee during its most complete tasting stage.

Front Street's Golden Mandheling coffee comes from Indonesia's well-known PWN company and is processed using the wet-hulling method. Wet-hulling significantly increases the defect rate of coffee beans, but the coffee flavor does not show particularly negative performance. Instead, it brings a grassy, muted aroma. In the final drying stage of wet-hulling, there is no parchment protection, and the green beans are directly exposed to the environment, allowing various fungi to grow. This gives Indonesian coffee its unique woody, spicy, and herbal notes, which is what we often call the "taste of the region."

Because wet-hulling uses "rough" friction to forcibly remove the parchment layer while the green beans are semi-dry, Mandheling green beans endure considerable squeezing pressure during production and are pressed out of shape or even broken. Therefore, wet-hulling gives Mandheling green beans a higher defect rate.

PWN company invests a large amount of manpower in green coffee beans. First, it only purchases G1-grade Mandheling coffee from the area around Lake Tawar in the Gayo highlands of northwestern Sumatra, and then undergoes four rounds of manual screening to ensure the color, shape, and size of the Mandheling coffee beans are uniform. Therefore, Front Street PWN Golden Mandheling tastes cleaner and more transparent, with more obvious body and sweetness. (Green coffee beans above screen size 18, with fewer than 3 defective beans in a 300g sample, are G1 grade, which is the highest grade of Indonesian green beans.)

In order to present the classic rich flavor of Mandheling coffee, Front Street roasters choose a medium-dark roast, making the aromas of dark chocolate and caramel more explosive. FrontStreet Coffee's baristas also adjust brewing based on the roast level and flavor type of the coffee beans.
