Flat white, also known asAussie White Coffee/Flat White Coffeeone of the most popular espresso milk coffees in Australia. In recent years, it has also become one of the hottest coffee products in domestic coffee shops, and it can be seen in cafes large and small almost everywhere.

Although this coffee is called Aussie White by domestic coffee fans, New Zealand and Australia are still in dispute over its place of origin. The reason is that after the coffee culture of Australia/New Zealand was brought in by Italian immigrants, it flourished in this new world.

The 1980s wasFlat White's gestation period. As Italian coffee culture took root, latte and cappuccino were of course equally common, but New Zealand and Australian coffee fans, drinking more and more refined coffee, began to pursue milk foam that was not like cappuccino with a tall peak, nor like latte with too much foam.

Therefore, Flat White developed in New Zealand and Australia, where dairy resources were abundant, and with baristas' superb milk-steaming skills, it developed a finer micro-foam than latte and cappuccino, allowing the fine hot steamed milk to lie steadily flat on top of the coffee. This is the starting point of Flat White. However, as to whether it came from Australia or New Zealand, each side has its own supporters. Since we were too late to join their past, let us temporarily regard it as the New Zealand-Australia region as commonly understood.

So the "Ao" in Aussie White Coffee actually refers to the New Zealand-Australia region. Regardless of which region it comes from, what can be certain is that Aussie White Coffee has a stronger coffee taste than cappuccino and latte, while the fine milk foam also adds a goose-down-like silky mouthfeel to this coffee.

Front Street Coffee (FrontStreet Coffee) daily offeringAussie White Coffeeuses a 200ml cup, adds two shots of espresso (40g), then heats the milk and creates 0.5cm-thick milk foam, then pours from the center, preserving the crema layer of the espresso to increase the richness of the first sip.

Latte, on the other hand, is made using a 300ml cup, adding two shots of espresso (40g), then heating the milk and creating 1cm-thick milk foam, then evenly blending it with the coffee, and finally creating various latte art patterns.

When coffee shops produce espresso, they usually use a dedicated espresso machine, using 9-10 bar of pressure to force hot water at about 94 degrees Celsius through extremely finely ground coffee powder, then extracting espresso at a 1:2 coffee-to-liquid ratio.

If makingAussie White Coffeeat home, you can use a home espresso machine or a portable manual espresso maker. However, the concentration is not as high as espresso from a commercial coffee machine, and the stability of coffee quality is also lower.

Using a portable manual espresso maker (here Front Street Coffee (FrontStreet Coffee) uses a Star Grain coffee maker for demonstration) to make espresso, Front Street Coffee (FrontStreet Coffee) recommends using 18g of extremely finely ground coffee powder, then adding 120ml of water at 95 degrees Celsius, and pressing directly until 40ml of coffee liquid is extracted, then stopping.

Then heat the milk to 55-65 degrees Celsius and pour it into a milk pitcher, then use a handheld milk frother to create milk foam, then use a spoon to remove the coarse bubbles on the surface and reduce the milk foam thickness to 0.5cm, then swirl the milk pitcher to blend the milk foam with the milk, and finally pour the milk into the center of the espresso. The finished product is about 200ml.

Why is Aussie White Coffee not available iced?

Usually when we drink latte, we can choose to make it iced or hot, while Aussie White is only served hot. This is because baristas hope that when drinking Aussie White, every sip can perfectly combine the milk foam with the milky coffee underneath. Only when the milk foam is very dense, relatively thin, and at a temperature suitable for drinking can you taste both the milk foam and the rich coffee liquid in every sip, and quickly finish it before the milk foam separates. After adding ice cubes, the cooled milk coffee will be somewhat diluted and cannot achieve the above effect.

If you are after a rich iced milky coffee, Front Street suggests you try the also very popular "Dirty" from the past two years. Cooled fresh milk is topped with extracted espresso, presenting a "dirty" visual effect, and the alternating hot and cold mouthfeel is very unique.

When making Aussie White, recommended espresso coffee beans

Some friends hope to recreate a delicious cup of Aussie White Coffee at home. Front Street believes that you should first choose the right coffee beans and extract high-quality espresso as the base. Since most home espresso machines are not as stable in function as commercial machines and produce very few cups, this also tests our grasp of parameters even more. Therefore, Front Street recommends choosing espresso blend coffee beans with higher stability. Espresso blends combine the coffee flavors of different origins and use medium or darker roasting, giving us a higher margin for error during extraction.
