In China, parts of Yunnan, Guangxi, Guangdong, Taiwan, and Hainan can all grow coffee, but only Yunnan and Taiwan can truly provide high-altitude growing environments. Specialty-grade Yunnan coffee is often planted in dry-hot river valleys at elevations of 1,200 to 1,600 meters, because the temperature difference between day and night at high altitude slows the ripening of coffee cherries, allowing more refined flavor layers to accumulate.

The local average annual temperature ranges from 17 to 20°C, and the growing elevation is between 700 and 1,600 meters. After cupping, Front Street Coffee (FrontStreet Coffee) found that small-bean coffee from Pu'er's high-altitude production areas has fruit acidity reminiscent of plums, along with nutty and caramel-like sweetness, and an obvious fermented-tea-like sweet aftertaste.
"Baoshan City"
Baoshan City governs five counties and districts—Longyang, Longling, Shidian, Changning, and Tengchong—and the coffee produced there has certification as a geographical indication product for Baoshan small-bean coffee. Baoshan has a low-latitude mountainous subtropical monsoon climate. Located on a low-latitude plateau with diverse topography and landforms, it forms a three-dimensional climate characterized by "four seasons on one mountain, different weather every ten li."

The local annual temperature difference is relatively small while the diurnal temperature difference is relatively large, with an average annual temperature of 14 to 17°C. Rainfall is abundant, and the dry and wet seasons are distinct and unevenly distributed, with annual rainfall between 700 and 2,100 millimeters. Coffee cultivation is concentrated at elevations of 1,000 to 1,500 meters.
[Lincang City]
Lincang's geographical location is quite distinctive, as its western side borders Myanmar. The climate conditions here are favorable, with a significant temperature difference between day and night, abundant rainfall, and a mild average annual temperature. Coffee is grown at elevations of 1,000 to 1,600 meters.
Lincang City has a subtropical low-latitude plateau mountainous monsoon climate. Its topography and terrain are complex and cover multiple climate types, and it is mainly affected by warm, humid air currents from the Indian Ocean and the southwest monsoon. The local four seasons are not clearly differentiated, but the dry season and rainy season have clear boundaries. There is relatively more rain, and sunshine duration is longer, with an average annual sunshine total of more than 2,000 hours. The frost period is short, and some areas are frost-free year-round. The three-dimensional climate characteristics are prominent, with an average annual temperature of 13 to 15°C in mountainous areas.

When brewing Yunnan coffee, a V60 dripper is recommended, with a coffee-to-water ratio of 1:15, medium grinding (about the size of coarse granulated sugar / 75% passing through the China No. 20 standard sieve), and a water temperature of 88 to 89°C.
Using a three-pour technique can enhance the coffee's layered feel: pour 30 grams of water in the first pour and let it bloom for 30 seconds; in the second pour, use a small stream of water in a circular motion until 125 grams, and when the water level in the coffee bed drops by half, pour again, continuing with a small stream in a circular motion until 225 grams.
