When Yirgacheffe is mentioned, many people will think of distinctive characteristics such as floral notes, low bitterness, citric acidity, citrus, and a tea-like mouthfeel…The reason Yirgacheffe coffee beans possesssuch a splendid flavor profile andpresent a crisp and bright tonalityis first attributed to the terroir and varieties of the origin, and secondly tothe control in roasting, because if the coffee beans are heated for too long, the essential floral and fruity notes will be masked during the caramelization process. Therefore, compared todark roasting,a medium-light roast of Yirgacheffecan better bring out its ownstrengths.

Many may know that Yirgacheffe is a producing region in southern Ethiopia, but ifwe further subdivide it, we can discover many small coffee-producing areas and cooperatives with distinctive characteristics, such as the adorably named Front Street Gutingding, whichnot only possesses the main flavor profile of Yirgacheffe beans but also carries a clear tea-like quality, drinking like lemon tea.
