In 2012, Gotiti, with about 300 farmer members, independently established the "Gotiti Cooperative." Gotiti Village was the earliest village area to be independently separated, and many smallholder farmers were also members of the original Worka Cooperative, so their coffee production techniques are naturally beyond question. Gotiti Cooperative is called the last pure land of Yirgacheffe, so the green bean processing methods used are also very traditional (washed and natural processing methods).


A brief introduction to washed processing: after coffee cherries are harvested, they undergo flotation to remove defective fruits; then the selected beans are mechanically depulped to remove the skin and pulp; afterward, the green beans with some pulp and mucilage remaining are placed in water for fermentation. After about 24 hours of fermentation, they can be taken out and washed; after washing, they undergo the step of sun drying to reduce the beans' moisture content to about 12%, and finally the parchment is removed. Washed processing is then complete!
