Alfonso Bialetti was an inventor and designer. After completing his studies in France and returning home, Alfonso entered the then-thriving Italian aluminum industry. In 1918, Alfonso founded his own factory and established the Bialetti company, starting to sell aluminum-related metal products, including household cleaning tools and other items.


Structure and Extraction Principle of the Moka Pot


The structure of the Moka Pot is actually very simple, consisting of three parts: the upper chamber, the filter basket, and the base. The lower chamber is the water reservoir, the filter basket is for holding coffee grounds, and the upper chamber is for the brewed coffee.

The principle of coffee extraction in a Moka Pot: By heating the lower chamber, the water inside boils, generating steam pressure. When the steam pressure reaches a certain level, it penetrates the coffee grounds in the filter basket, and hot water surges into the upper chamber. The equipment needed for brewing with a Moka Pot includes: a Moka Pot, a heating source device (induction cooker, ceramic hob, etc.), coffee beans, a grinder, and water.

First, pour an appropriate amount of water into the lower chamber of the Moka Pot, ensuring the water level is about 0.5 cm below the pressure relief valve. The function of this pressure relief valve is very important; it effectively prevents dangerous explosions caused by excessive internal pressure due to factors such as coffee grounds being too fine. If the water level exceeds the valve opening, it may lose its pressure-relief effect, thereby increasing the risk of bursting.

Slowly pour the ground coffee into the filter basket and gently tap to distribute the coffee grounds evenly. If the coffee grounds form a small mound, you can use leveling techniques to flatten them. The purpose of filling the filter basket with coffee grounds is to avoid extracting undesirable defective flavors as much as possible.

After assembling the lower chamber with water and the filter basket, tighten the upper and lower parts of the Moka Pot in sequence and place it on the heating source device over high heat.

When the temperature of the Moka Pot gradually rises and a distinct "whirring" sound is heard, it indicates that the suitable extraction temperature has been reached. At this point, reduce the heat source to low and open the lid of the upper chamber.

When about half of the coffee liquid has flowed out into the upper chamber, turn off the heat source. At the same time, move the Moka Pot to the table (you can place a damp cloth underneath to avoid burns). The residual heat and pressure inside will cause the remaining coffee liquid to continue "surge" into the upper chamber, completing the entire extraction process.

After extraction is complete, you can pour it into a cup and taste it. Coffee extracted from a Moka Pot is very rich. You can also mix it with an appropriate amount of water or milk for a better flavor. If you have a milk frother at home, you might even be able to do latte art!


It is worth noting that the grind size of the coffee beans for a Moka Pot is very important, because compared to the grind size used for espresso machines, it is not as fine. The extraction pressure of an espresso machine (9 bar) can overcome the resistance of the coffee puck. However, the pressure of a Moka Pot is not that high. If the grind is too fine, the coffee liquid may not flow out, and it will increase the pressure in the lower chamber. If pressure is not released in time, there is a risk of explosion.

Therefore, if after heating is complete the coffee liquid does not flow out for a long time, stop heating immediately. Also, too coarse is not good either, because the resistance will be too low and the coffee liquid will spray out, easily causing burns and other situations.
