Coffee outside is certainly delicious, but who can afford to eat out every day! Those with strong hands-on skills usually choose to make it themselves at home. For the Americano and latte that people drink regularly, the most important thing is still the espresso base. Due to limitations of money and space, many people cannot equip their homes with an espresso machine, so does that mean there is no way to make rich, mellow coffee at home?

As people's demand for rich coffee grows, and in order to satisfy this need right at home, the moka pot has come into people's view. After seeing many bloggers share online, people realize that coffee brewed with a moka pot can also have a rich crema. But when they try it themselves, they often fail—either there is no crema, or it tastes burnt, bitter, and sharply acidic. What is going on? Could it be thatthe method of using a moka potis wrong?

If you want to brew a delicious cup of moka pot coffee, first we need to understand the principle behind the moka pot. The moka pot first appeared as a tool invented in the 1930s. Its inventor, Alfonso Bialetti, got the inspiration when he saw his wife using a washing machine to wash clothes. At that time, the structure of the washing machine was divided into upper and lower spaces, connected by a tube. The upper space held the clothes to be washed, while the lower space contained the liquid used for washing. After appropriate heating, the liquid in the lower space gushed upward through the middle pipe and sprayed onto the clothes.

Seeing this phenomenon, Bialetti used his many years of experience in aluminum craftsmanship to create the moka pot. The structure of the moka pot consists of the upper chamber, the filter basket, the lower chamber, and the metal tube connecting the lower chamber to the upper chamber.

The working principle of the moka pot is to heat the water in the lower chamber. When the water boils, it produces a large amount of steam. Within the limited space, the hot water is forced toward the metal tube connecting the upper and lower chambers, passes through the coffee grounds in the middle, and finally gushes out and accumulates in the upper chamber.

Since using a moka pot is so simple—just add hot water, put in the coffee grounds, and heat it to brew coffee—thenwhat are the advantages and disadvantages of brewing coffee with a moka pot?

If you go out to consume at coffee shops, you will rarely see moka pots used for service. That is because when extracting espresso, commercial espresso machines use an extraction pressure of at least 9 bar or more, while a moka pot cannot possibly have such pressure when brewing coffee.

So,is what a moka pot brews espresso? The coffee brewed by a moka pot is very rich, but it is not the same thing as the espresso extracted by an espresso machine.

That being the case, what coffee beans are suitable for a moka pot? Given the original intention of moka pot brewing, what everyone wants is a cup of rich, mellow coffee. Compared with lightly roasted coffee beans, darkly roasted coffee beans have a fuller body.

People often walk into the FrontStreet Coffee store and ask the FrontStreet Coffee baristas, on Front Street's bean list, what coffee beans are suitable for a moka pot. Similarly, the medium-dark roasted coffee beans on Front Street's bean list can all satisfy everyone's pursuit of a full-bodied taste.

Among them, the FrontStreet Coffee baristas recommend the Queen Estate from Brazil. This coffee bean is a natural-process yellow bourbon produced in the Mogiana region of São Paulo state, Brazil.

Brazil was initially a country that planted Typica, and later, in order to increase coffee productivity, it introduced the Bourbon variety from Bourbon Island. Today, Bourbon has become the main force among Brazilian coffee varieties. Compared with Typica, Bourbon variety coffee has a more pronounced caramel sweetness.

Yellow Bourbon was discovered in the 1970s on a coffee estate in São Paulo state, Brazil. Scientific research found that the mucilage layer of Yellow Bourbon coffee cherries is thicker, and the mucilage layer of coffee fruit is rich in sugary substances. This means that Yellow Bourbon has a more obvious sweetness than Red Bourbon.

Brazil's Queen Estate has long been famous in the coffee world. Since Brazil held its first COE competition at the end of the last century, it has won awards repeatedly, once winning 12 awards in 7 years, which shows that the quality of Queen Estate's coffee beans is extraordinary.

When processing this coffee bean, Brazil's Queen Estate adopted the natural process, spreading selected ripe coffee cherries evenly on raised beds and turning them manually at regular intervals to ensure the coffee cherries dry evenly, avoiding unpleasant fermented acidity. Being elevated far from the ground also prevents the coffee cherries from developing an earthy, musty smell from contact with soil.

In order to highlight the sweetness and full-bodied taste of Brazil Queen Estate natural yellow bourbon, FrontStreet Coffee adopted a medium-dark roast level.

If you are brewing coffee with a moka pot, the coffee grounds should be ground to a flour-like consistency, with particle size between 0.3 mm and 0.55 mm, which is coarser than espresso machine grounds. Since the particle size is difficult to distinguish with the naked eye, you can confirm the grind level through the following two methods:

裝粉

First, buy a particle size ruler or moka-specific grounds for reference and comparison; second, determine the grind by continuously adjusting.

When the coffee liquid gushes out like a fountain, it means the coffee grounds are ground too coarsely and the water encounters too little resistance; when you hear a low humming sound but the coffee liquid does not rise for a long time, you need to immediately pick up the moka pot and move it away from the heat source, and take safety precautions.

噴湧

Because when a moka pot extracts coffee, the relatively sealed and limited space in the lower chamber generates a large amount of steam, causing higher pressure in the lower chamber, the entire operation process requires attention to safety. Those who have carefully observed a moka pot should notice that there is a protruding hole in the lower chamber. That is precisely the moka pot's pressure relief valve. The pressure relief valve exists to prevent certain factors (such as too fine a grind) from causing excessive pressure inside the lower chamber and leading to an explosion accident.

Therefore, when preparing the equipment and materials, Front Street suggests that when filling the lower chamber with water, never let the water exceed the valve. When water exceeds the valve, the pressure relief valve will lose its pressure-relief effect, creating a huge safety hazard.
