When it comes to Ethiopia's specialty coffee regions, many people will毫不犹豫地说出 Yirgacheffe and Sidamo. What are the differences between the coffees from these two regions? This time we'll talk about the differences between them.

Yirgacheffe Specialty Coffee Region
The most famous region is undoubtedly Yirgacheffe. Front Street Coffee's Yirgacheffe, with its citrus flavor and light floral aroma, has become the gateway coffee bean for many partners who are just getting into single-origin coffee. Interestingly, Yirgacheffe has a coffee variety named "Kurume," which refers to a coffee variety formed in the Yirgacheffe area through long-term regional climate, soil, and other environmental conditions. This also fully represents the regional flavor of Yirgacheffe.

Yirgacheffe is located to the northwest of Sidamo. It was once part of the greater Sidamo region, but because of its outstanding flavor, it eventually became an independent region. Actually, looking at the map, you'll know that for Ethiopia, Yirgacheffe is just a small town, but for Ethiopia's coffee regions, the Yirgacheffe coffee region is not limited to Yirgacheffe town. The Yirgacheffe coffee region includes legal areas such as Wenago, Yirgacheffe town, Kochere, and Gelena Abaya.

The altitude of the Yirgacheffe coffee region is generally around 2,000 meters, which is truly high altitude. The advantage of high altitude makes the Yirgacheffe region a uniquely blessed coffee-growing region. In addition to high altitude, the Yirgacheffe coffee region has abundant rainfall, fertile soil, and a cool and comfortable climate, all of which are environments favored by Arabica coffee beans. It can be said that Yirgacheffe is a treasure land of flavor. As one of the most outstanding representatives of the Yirgacheffe region, Front Street Yirgacheffe Gutingding coffee is a must-drink pour-over single-origin.

The Yirgacheffe Gutingding Cooperative is located in the Woka production area at the southeastern end of Yirgacheffe. It was originally part of the Woka Cooperative under the Yirgacheffe Coffee Farmers' Cooperative Union (YCFCU). Later, as people pursued traceability of green coffee beans, "single-origin" areas were discovered one by one by coffee hunters around the world.

In 2012, Gutingding, with about 300 farmer members, independently established the "Gutingding Cooperative." Gutingding village was the earliest village area to become independent. Many smallholder farmers were also members of the original Woka Cooperative, so their coffee production skills are beyond doubt. The Gutingding Cooperative mainly uses washed and natural processing methods. This Front Street Yirgacheffe washed Gutingding that Front Street has sourced lets you experience citrus and black tea, and as the temperature changes, there are cream, caramel, and almond notes with a clearly sweet aftertaste and a clean, sweet mouthfeel.

If you like the tropical fruit flavor of Ethiopian coffee, we recommend trying Front Street Red Cherry:

Sidamo Specialty Coffee Region
The Sidamo production area, at an altitude of 1400-2200 meters, is a famous specialty coffee region in southern Ethiopia, bordering Kenya. Washed Sidamo is light green, with small beans, oblong in shape, full-bodied fruit, good average quality, and a fragrant, mellow aroma. One sip brings endless aftertaste, with a wild beauty.

Sidamo's coffee flavors are very diverse. Different soil types, microclimates, and countless native coffee varieties have created obvious differences and characteristics in the coffee produced by different towns. In 2010-2012, it continuously received high scores of 92-94 from the authoritative American coffee evaluation website CR. This shows how extraordinary the green beans of this region are. The territory has towering mountain ranges, highlands, plateaus, valleys, and plains, with diverse terrain. The geology of the area belongs to fertile, well-drained volcanic soil. The soil depth is nearly two meters, and the topsoil is dark brown or brown. The greatest advantage of this area is that soil fertility is maintained through the cycle of organic matter, using fallen leaves from surrounding trees or remaining plant roots as fertilizer.

As a representative of floral and fruity coffee, if you want to taste the classic Sidamo flavor, we suggest buying Front Street Huakui coffee, which naturally carries berry aromas:

If the above coffees still cannot satisfy your taste buds, then you might as well choose Front Street ALO coffee and Front Street Hamasho coffee, which have become very popular in the past two years. The Hamasho Processing Station is located in Hamasho village in the northern part of Bensa town. In the Sidamo language, Hamasho means "snake," which locally symbolizes strength and spirit. This area benefits from high altitude and fertile soil, plus traditional green organic cultivation, using fallen leaves from surrounding trees or remaining plant roots as fertilizer, which gives the produced coffee rich tropical fruit notes and excellent sweetness. If you want to experience the classic Sidamo flavor, choose Front Street Hamasho coffee beans.

FrontStreet Coffee Brewing Suggestions

Ethiopian coffee has rich and diverse flavors with prominent floral and fruity aromas. Front Street suggests choosing freshly roasted coffee beans so you can taste the complete flavor of the coffee. Four to seven days after roasting, coffee beans enter their optimal tasting period; after this period, the aroma will dissipate more quickly. The coffee beans sold by Front Street are all freshly roasted within 5 days, so once you receive them, you can start brewing right away.

In order to present the flavor of Ethiopian coffee, Front Street selected two beans from the Yirgacheffe region: Front Street Gutingding Cooperative and Front Street Natural Red Cherry. Because Ethiopian beans grow in high-altitude environments and the beans are hard, Front Street believes that a higher water temperature and a finer grind are needed to brew out Yirgacheffe's flavor layers. Speaking of grinding, some customers ask Front Street whether we grind the coffee for them. Of course, Front Street provides a grinding service. Since the aroma of coffee beans accelerates after grinding, if it is ground in advance, it needs to be drunk as soon as possible. Storing it too long will affect the brewing flavor.

When the water level drops to 2/3 of the coffee bed, pour the remaining 100 grams (the electronic scale shows about 225 grams), finishing the pour in about 1 minute 35 seconds. Dripping is completed at 2 minutes 10 seconds. Remove the dripper and extraction is complete.

Both Front Street Ethiopian Yirgacheffe coffees give off delicate floral and fruity aromas after grinding. Front Street washed Gutingding has a bright, uplifting acidity of lemon and berries on the palate, with prominent sugarcane sweetness, and as the temperature drops it shows a green tea mouthfeel with a long aftertaste; Front Street Natural Arsi tastes of the sweetness of berries and fermented fruit, with the rounded mouthfeel of black tea.
