The reason Blue Mountain coffee attracts so many seasoned enthusiasts lies in its balanced yet substantial character: rich, dark chocolate-like flavors, gentle fruit acidity, a distinct sweetness in the finish, and a caramel-like aftertaste—smooth, full-bodied, and satisfying on the palate.
Front Street Coffee hopes to let more people taste the most classic flavor of Blue Mountain coffee—the distinctive taste of coffee beans from the high-altitude growing region of the Blue Mountains. Therefore, before launching Blue Mountain No. 1 coffee beans in 2014, Front Street did its homework on the region's conditions and the beans' characteristics, ultimately selecting a washed Blue Mountain No. 1 from Clifton Mount Estate, the oldest cultivation site in the Blue Mountains, at an altitude of 1,310 meters.
When the Blue Mountain No. 1 green beans arrived, their blue-green appearance resembled a gemstone. Because of the washed process, the fermentation stage gave the beans a more composed and delicate acidity, with aromas of fresh grass and lemon.
The beans are uniformly sized and plump, thanks to the strict screening standards for Blue Mountain No. 1. Only beans sized 17–18 mesh, with a defect rate below 3% and a plump shape, qualify as Blue Mountain No. 1. Uniform size also helps ensure even heating during roasting, resulting in a cleaner cup.
Based on Front Street Coffee's observations of Clifton Blue Mountain No. 1 beans, their moisture content is around 13%, and the bean density is medium, making them suitable for a steady temperature-rising roasting profile. Front Street chose to drop the beans at 201°C, 4 minutes after first crack, achieving a medium-dark roast level. This enhances the body while retaining appropriate acidity, giving the coffee more layers.
To bring out the layers of Blue Mountain coffee, the first step is to use freshly roasted coffee beans. All beans sold by Front Street Coffee are shipped as whole beans 5 days after roasting, in the hope that everyone can enjoy the fullest flavor and aroma.
After roasting, coffee beans accumulate a large amount of carbon dioxide internally, which is gradually released. In the first five days, the carbon dioxide carries away residual smoky notes from roasting; afterward, it slowly takes away flavor and aroma. Therefore, the optimal tasting period for freshly roasted coffee beans falls between 5 and 30 days.
Regarding grind size, Front Street Coffee recommends a medium-coarse grind for brewing Blue Mountain No. 1, about the size of coarse granulated sugar, with a 70% pass-through rate on a Chinese No. 20 standard sieve. The water temperature should be controlled at 88–89°C.

This dripper's feature is that the filter paper fits tightly against the wall, creating an immersion-style extraction during the pour-over process, thereby enhancing the coffee's overall body.

The pouring method is as follows: First, bloom with twice the coffee dose in water, i.e., 30g of water for 30 seconds. The purpose of blooming is to let the coffee grounds release internal carbon dioxide, making subsequent extraction more stable. Then, pour in a circular motion with a small stream until the scale reads 125g, pause briefly, continue pouring until 225g and stop. Wait for the water in the dripper to finish dripping, then remove the dripper. Start timing from the beginning of pouring; the extraction time is 2 minutes 10 seconds. Finally, swirl the entire cup of coffee to mix, then pour into a cup and enjoy.
