Tracing the Origins of Yunnan Small-Bean Coffee Varieties and Analyzing Their Pour-Over Flavors: From Catimor to Typica

Yunnan small-bean coffee usually refers to the Catimor variety. This variety was born from the pursuit of yield and disease resistance, yet it has long carried the controversy of flavor defects. This article will sort out the lineage of variety evolution from Typica to Catimor, analyze the causes of Catimor's flavor characteristics, and introduce the improvements in planting and processing techniques in the Yunnan production area. At the same time, drawing on Front Street brand's practices with two products, Baoshan washed Catimor and Lincang sun-dried Typica, it shares pour-over extraction parameters and flavor performance, presenting the diverse face of Yunnan coffee to coffee enthusiasts.

Yunnan Arabica Coffee

In coffee taxonomy, it is classified as Coffea arabica L. In the 1950s, the main varieties planted in the Baoshan area of Yunnan included Typica, Bourbon, and S288. Typica is the variety with the longest history among them. Its flavor is pure and elegant, but its yield per unit is low, and its resistance to disease is not strong, making it susceptible to infection and death. For this reason, Yunnan later introduced the Catimor variety, which can be planted at high density and has excellent disease resistance. It gradually became the coffee variety with the largest planted area in Yunnan today. Therefore, what we commonly call "Yunnan small-bean" in most contexts actually refers to Yunnan Catimor coffee beans.

In 1959, Portuguese researchers developed a new type of coffee plant that was resistant to pests and diseases, while also being able to grow normally and achieve high yields in low-altitude areas. In other words, Catimor was initially selectively bred as a "commercial bean." Although Catimor achieved a certain degree of commercial success, its cup quality has often been criticized, and its flavor is often considered to have defects. For this reason, Catimor was long overlooked, and some producers were even unwilling to label Catimor on the packaging. So what exactly causes Catimor to carry these shortcomings?

Catimor is a variety obtained by crossing Caturra and Timor. Caturra is a natural mutation of Bourbon and has an excellent reputation, frequently appearing in various specialty coffee competitions. Among Front Street's own roasted coffee beans, dozens are made with Caturra. Timor originated from a natural cross between Robusta and Arabica and was discovered on Timor Island in Southeast Asia in the early twentieth century. Robusta's flavor has never been popular, with a heavy bitterness as its main note, but it has extremely strong disease resistance, tolerates cold and heat, and has high yields. Catimor therefore inherited some of the above characteristics, with a higher survival rate, better fruiting rate, and a shorter maturation cycle, naturally making it more favored by coffee farmers and producers.

In the past, Yunnan coffee farmers lacked mature accumulated experience in coffee cultivation. They planted Catimor in lower-altitude areas, and combined with extensive processing methods, the coffee produced was mediocre in quality and was mostly purchased for commercial instant coffee. With the promotion of domestic specialty coffee culture, more and more coffee professionals and researchers have devoted themselves to the cultivation stage in the Yunnan production area, continuously improving coffee quality in areas such as pest and disease control, shade tree arrangement, soil and water conservation, selection of planting altitude, and fresh fruit picking and processing techniques. Today, Yunnan Catimor coffee produced with professional methods can also show pleasant aroma and a clean cup.

When Front Street launched Front Street Yunnan Coffee Daily Bean, after multiple rounds of cupping comparison, it finally selected washed Catimor coffee from the Baoshan production area as the representative product of Front Street Yunnan Coffee, launched in a 100-gram small package, allowing more people to taste "the flavor of Yunnan." From this Front Street Yunnan Daily Bean, Front Street perceived a relatively balanced mouthfeel, with a slight nutty note, a bit of plum fruitiness, and a brown-sugar-like sweetness, with an overall gentle style.

Most Yunnan coffee farmers have relatively difficult production conditions and cannot afford expensive processing equipment. Therefore, the vast majority of Yunnan coffee beans use natural processing methods, namely washed and sun-dried. The reason Front Street chose washed Yunnan small-bean is that washed beans have better cleanliness and can present the basic flavor profile of the production area. This is also a natural processing method that Front Street particularly favors. In addition, Yunnan is rich in freshwater resources, and the harvest season often coincides with rainfall, making it difficult to adopt sun-dried processing on a large scale.

If you prefer Yunnan coffee in the sun-dried style, Front Street also has a Yunnan small-bean coffee from the Lincang production area in Yunnan—Front Street 2013. It belongs to the elegant-flavor Typica variety and uses the natural sun-dried processing method. Lincang, Yunnan, is affected by the warm and humid airflow from the Indian Ocean and the southwest monsoon. The boundaries between the four seasons are blurred, but the dry and rainy seasons are distinct, with abundant rainfall, long sunshine hours, and short frost periods. Some areas have no frost throughout the year, and the vertical climate characteristics are significant, making it very suitable for Arabica coffee growth. Front Street specifically chose the most original Typica. Typica has rich and diverse flavors, showing various fruit acidity and a delicate mouthfeel, and is recognized as a high-quality variety. The famous Front Street Blue Mountain Coffee and Front Street Hawaii Kona Coffee both belong to Typica.

When November arrives each year, the coffee cherries grown by Front Street gradually mature. Front Street arranges workers to pick red coffee cherries one by one and spreads the fresh fruit in the sun to dry naturally, turning them regularly for even dehydration to prevent negative flavors from excessive fermentation. After the coffee beans dehydrate to a purplish-red color and reach the target moisture content, they are sent for hulling and roasting. Front Street sun-dried Typica shows fuller fermented flavors, with prominent sweetness and aromas of caramel, berries, and black tea.

Some friends do not know how to extract Front Street Yunnan small-bean coffee beans after purchasing the roasted beans. First, Front Street believes that the freshness of coffee beans is crucial. Roasted coffee beans have an optimal tasting period, and once the peak aroma is missed, it is difficult to fully extract the flavor. The beans shipped by Front Street are all freshly roasted within 5 days, with the aim of allowing everyone to enjoy the most complete tasting period.
