As coffee culture gradually becomes more widespread in China, many newcomers who have just stepped into the coffee world begin to pick up various equipment to delve into extraction. Compared to the expensive and cumbersome espresso machines, the moka pot is much simpler and more accessible, which is why it has become a go-to entry-level device for many coffee beginners.

First, let's understandthe moka pot's structure and principle

The moka pot is a direct-heat strong coffee device. Its original design concept was to use boiling water to create steam pressure, which directly penetrates the coffee grounds, extracts flavor compounds, and pushes them up to the upper chamber, resulting in a rich coffee liquid. Coffee extracted with a moka pot has an intense taste, combining acidity and bitterness, with a small amount of crema.


The moka pot's extractionworks similarly to the pressurized espresso we commonly see. Water boils in the lower chamber and produces steam; as more and more steam accumulates, it creates pressure that forces hot water through the coffee grounds, dissolving flavor compounds that flow with the coffee liquid into the upper chamber with force. The moka pot brews coffee at approximately 1.2 to 3 atmospheres of pressure. The increased pressure concentrates the coffee flavors even more, which is why coffee brewed with a moka pot has a full-bodied taste.

Before brewing coffee, we need to prepare fresh coffee beans, water, a grinder, a heated gas stove (or induction cooker), and our protagonist——the moka pot. 1. First, remove the base of the moka pot and add purified warm water to the lower chamber. This can shorten the brewing time and prevent the coffee grounds from heating too quickly, which can easily cause a burnt, bitter flavor.

Control the water level to about 0.5cm below the pressure relief valve line. The safety valve prevents the coffee pot from exploding due to a clogged extraction channel caused by overly fine coffee grounds. If the safety valve is submerged in water and the extraction channel is also blocked, the consequences of a high-temperature coffee pot explosion are unimaginable.

2. Weigh the coffee beans and grind them. To extract a rich black coffee, the grind size needs to be much finer than regular pour-over. Front Street's store uses an EK-43s grinder with a setting of 0.5. The amount of coffee powder depends on the size of the moka pot. Here at Front Street, we use a three-cup Bialetti classic pot with 18g of coffee powder.

3. Pour the ground coffee into the filter basket, fill it to nine-tenths full, level it with your finger, and place it into the base. There's no need to tamp it firmly—an overly compacted layer can easily block the water flow from rising, thereby affecting extraction.

4. Next, screw the upper chamber and lower chamber tightly together, wipe the pot dry with a towel, and place it on a gas stove or induction cooker to heat. When using an open flame, be careful to control the flame so it does not exceed the base of the moka pot.

5. Simply wait for the moka pot to heat up. When you hear a hissing sound, turn down to low heat, and the coffee liquid and crema will slowly flow out. When you see the coffee liquid in the upper chamber reach half full, you can turn off the heat source and move the pot to the table, using the residual heat and pressure inside the pot to continue extracting the remaining coffee liquid.

Finally, pour the extracted coffee liquid into a cup and enjoy it directly. On the palate, there are rich whiskey notes, vanilla, cream, and the sweet-tartness of berries, along with the aroma of roasted nuts. Adding a certain proportion of hot water brings out a fresh fruity sweet-tartness, and pairing it with milk gives it a chocolatey sweetness.


Details to note in daily useof the moka pot

Our common moka pots generally have a metal exterior. When heating at high temperatures, try not to touch the pot body—use a wet towel to avoid burns. If we hear a humming sound but the upper chamber never overflows with coffee liquid, it's likely that the spout is clogged. You should first turn off the heat source to avoid excessive internal pressure causing an explosion and safety hazards.

If the coffee grind is too coarse, it will lead to insufficient extraction and splattering. If it's too fine, it will cause over-extraction, resulting in a heavy burnt-bitter taste that's hard to drink. The filter basket needs to be filled and leveled. If there isn't enough coffee powder, when the water in the lower chamber enters the middle coffee layer under steam pressure, it won't be able to extract fully, which will cause significant splattering in the upper chamber and an indescribable taste.

Since the moka pot uses pressurized extraction, if you use light-roasted coffee, the light-roasted beans are harder in texture and typically require a finer grind to increase extraction yield. However, fine grinding under high temperature and pressure can easily make the coffee sour and astringent, and it's also harder to extract the aroma of crema.Therefore, Front Street recommends using darker-roasted espresso blend coffee beans as the raw material.
