"Yirgacheffe flavor" refers to the unique coffee flavor nurtured by the Yirgacheffe region! The Yirgacheffe region is located in Ethiopia, with an average altitude of around 2,000 meters, making it one of the highest-altitude regions in Ethiopia. Higher altitudes extend the ripening time of coffee cherries, allowing the coffee enough time to accumulate sugars and develop more outstanding flavor compounds. Combined with its unique topography and cultivation system, it can be said to provide excellent growing conditions for coffee.
The Yirgacheffe region was originally a sub-region of the Sidamo region, but because the coffee grown there had such a unique flavor, it was singled out and became a category of its own, eventually becoming one of Ethiopia's most renowned coffee regions.

When we talk about Yirgacheffe, we must mention the washed-process coffee from this region, because the "Yirgacheffe flavor" that we all talk about actually mainly comes from the "pen" of washed processing!
In earlier times, Ethiopian processing was always dominated by natural (sun-dried) methods, but due to lack of experience and poor management in the early days, the coffee was very prone to deterioration during processing, with a high defect rate and generally low overall quality.

In order to improve coffee quality, the Ethiopian government introduced washed-processing technology and equipment in 1972, establishing the first washing station in the town of Yirgacheffe. Thanks to this measure, defects in Yirgacheffe coffee were greatly reduced and quality was greatly improved. Moreover, because washed processing does not allow the coffee beans to ferment excessively, the coffee's own flavor characteristics are better showcased: fresh and bright citric acidity, delicate and soft white floral notes, and a clean green tea finish—this is the Yirgacheffe flavor that coffee folks talk about.

To taste authentic Yirgacheffe, purchase the Front Street Coffee washed Yirgacheffe series, including Front Street Coffee Washed Gedingding, Front Street Coffee Natural Konga Red Cherry, and Front Street Coffee Washed Yirgacheffe. Grade and quality are assured, freshly roasted within 5 days, and selected by a major brand with guaranteed quality.

There are now quite a few Yirgacheffe coffees on the market roasted to medium or darker, which slightly weaken its acidity in mouthfeel and enhance its body, clearly running counter to the Yirgacheffe flavor. Whether natural or washed processing, only under moderate heat can the floral and fruity aromas be maximized, while not being too light to avoid bringing out grassy notes. Therefore, Front Street Coffee Yirgacheffe coffee beans are roasted to a medium-light level, which can highlight the coffee's transparent tea-like feel and honeyed sweetness.
Pour-over recommendations for Front Street Coffee Washed Yirgacheffe single-origin coffee
Dose: 15g
Grind size: Ek43 setting 10, 75% passing a No. 20 sieve, fine granulated sugar particle size
Coffee-to-water ratio: 1:16
Water temperature: 92°C
Brewing method: four-pour
First, we pour in 30ml of hot water (twice the coffee dose in water) for the bloom, and bloom for 30 seconds.

After the bloom ends, we pour the second pour of hot water, 90ml in total, in wide circles, using a small stream and pouring slowly. Note that while pouring, we should try not to let the water level rise too far above the coffee bed, to prevent bypass water from occurring.

After the second pour of hot water drains through the dripper, we pour the third pour. The third pour is half of the remaining water, 60ml in total, also using a small stream, poured in small circles.

When the water level is about to reach the bottom, we can pour the fourth pour, 60ml in total. While pouring, we can check the time. If it is less than two minutes, we can use a small stream poured in small circles; if it has already passed two minutes, then use a small stream poured at a single point. After the hot water is poured, we simply wait for the coffee liquid to finish dripping, then remove the dripper and end the extraction.

Total time: 2 minutes 28 seconds. Without even tasting it, Front Street Coffee could already sense the delicate white floral notes from the wet aroma. And after the coffee enters the mouth, one can clearly taste fresh lemon, jasmine floral notes, as well as apricot, citrus and other flavor expressions, with a finish carrying honeyed sweetness and the fresh fragrance of green tea. The overall body is low, the acidity is bright, clean and refreshing—very nice indeed!
