Yirgacheffe is a small town in Ethiopia, with an altitude of 1700-2100 meters, making it one of the highest coffee-producing regions in the world, and therefore very suitable for growing Arabica coffee. Under Ethiopia's ECX system, the Yirgacheffe area is further divided into four sub-regions: Yirgacheffe, Worka, Kochere, and Genlena Abay. The soil here is fertile, with an average altitude above 1800 meters, and it is a high-altitude area with large temperature differences between day and night. The production methods of each sub-region, combined with the area's unique native heirloom varieties, give each batch of coffee beans a distinctive flavor, making them a daily staple for many coffee lovers.



Washing steps: After the coffee cherries are picked, they are placed in water, and the buoyancy of the water is used to remove underripe cherries. Then a depulper is used to remove the skin and pulp of the berries, after which they are left to rest in fermentation tanks for 18-36 hours until the mucilage layer breaks down. After fermentation is complete, the parchment beans are scrubbed in channels for 30-60 minutes. Through specially designed channels and the washing force of water, low-density and poor-quality beans can be removed. The high-quality coffee beans are then drained of water and spread on African raised beds to dry.
