1.Fresh Coffee Beans
Front Street believes that the optimal flavor window for coffee beans is 30 days. After 30 days, the aroma molecules in the coffee beans decrease as carbon dioxide is released, so coffee beans past their flavor window may taste bland and flat when brewed. This is also why Front Street always emphasizes "use freshly roasted coffee beans" before discussing any brewing knowledge.

2Coffee Bean Grind Size
The finer the coffee beans are ground, the more easily the coffee grounds accumulate at the bottom of the filter paper, creating greater extraction resistance, so the flow rate is slower and the extraction time is longer. The resulting coffee is prone to unpleasant flavors like woody or off notes. The coarser the coffee beans are ground, the larger the gaps in the coffee bed, the less coffee grounds come into contact with hot water, the weaker the extraction resistance, the faster the coffee drips, and the lower the extraction yield—so the coffee flavor is also weaker.

To ensure that each bean's grind size is optimal for brewing, Front Street recommends purchasing a No. 20 cup testing correction sieve with a mesh aperture of 0.85mm. Weigh out 10g of coffee beans, grind them at an approximate setting into coffee grounds, then pour them into the sieve to sift. Weigh the sifted coffee grounds (you must sift until no more coffee grounds can pass through to consider the sifting complete). A pass-through rate of 80% (8g passing through from 10g of grounds) is the most suitable grind size for medium-light roasted coffee beans, and a pass-through rate of 70%-75% (7-7.5g from 10g of grounds) is the most suitable grind size for medium-dark roasts. If the pass-through rate exceeds the suitable range, adjust the grind coarser; if it falls short, adjust the grind finer.
3.Brewing Water Temperature

7. Pour-Over Coffee Brewing Time
During coffee extraction, the aroma and flavor are intense and the concentration is high in the early stage. The further along the extraction goes, the more the flavor and aroma diminish. After aroma molecules dissolve, they leave the coffee cells through permeation—this process is called diffusion. The aroma molecules diffuse into the hot water, forming the final coffee extract.
