As a symbol of Italian coffee culture, the moka pot is one of the most famous brewing devices in the world. Unlike other brewing devices, the moka pot is a device that extracts rich coffee through heating and pressure. It was invented in 1933 by the Italian Alfonso Bialetti and is mainly popular in European countries, especially in its birthplace, Italy, where the vast majority of households have a moka pot at home.Traditional moka pots are made of aluminum alloy and can only be heated over an open flame during use. Nowadays, most on the market are mainly made of stainless steel and can be placed directly on an induction cooker for heating and coffee extraction. When purchasing, we can also choose moka pots of different sizes according to our needs, with the most common being the compact 2–3 serving size.

From the picture, we can see that the moka pot is divided into upper and lower structures and is mainly composed of three parts: the upper chamber that holds the coffee liquid, the filter basket that holds the coffee grounds, and the lower chamber that holds water. When using a moka pot to extract coffee, a heat source is used to heat the water in the lower chamber to generate steam pressure. Once the pressure is sufficient, it pushes the hot water upward, permeates the coffee grounds to bring out soluble aromatic substances, and continues upward until a rich cup of coffee liquid is obtained. When drinking, simply add water or milk according to your preference.

Before extracting coffee, you need to prepare a bag of coffee beans at their optimal tasting period, a gas stove or induction cooker for heating, a grinder for grinding coffee beans, and water. The grind size for a moka pot is generally a bit coarser than espresso powder, and much finer compared with pour-over. If the grounds are ground too coarse, the contact area between water and coffee grounds will be smaller, which will not only lead to insufficient extraction and a weak taste, but also cause the liquid to gush out because the resistance to upward flow is too low, creating a risk of splashing and scalding. Front Street recommends a coarseness of EK-43s #3-3.5 setting, which feels a bit finer than caster sugar.


1. Add hot water to the lower chamber, and try to keep the water level 0.5 cm below the pressure relief valve (safety valve). Front Street has measured that the amount of water at this position is about 100 g, and when the coffee grounds are leveled in the filter basket, it is about 20 g, so the coffee-to-water ratio will fall at 1:5. Note that using cold water will increase the soaking time of the coffee grounds and promote over-extraction and bitterness, so Front Street recommends using hot water, which can also shorten the extraction time.

2. The grind size of the coffee grounds needs to be finer than pour-over coffee and coarser than espresso. You can refer to the size of the filter basket mesh gaps to ensure that the coffee particles are filtered out. Pour the coffee grounds gently into the filter basket and use your finger to level and smooth them evenly.

3. Put the filter basket back into the lower chamber, tighten the upper chamber, place it on the electric ceramic stove and begin heating, and wait for the moka pot to heat up.

4. When you hear a hissing sound from inside the moka pot, turn the stove to low heat and open the lid of the upper chamber. At this point, you can see the coffee liquid and crema slowly flowing out.

5. When the coffee liquid in the upper chamber is half full, you can turn off the heat source and move the pot to the table, using the residual heat and pressure inside the pot to continue extracting the remaining coffee liquid. It should be noted that the moka pot uses metal parts, so try not to touch the body during high-temperature heating to avoid burns.

6. The finally extracted coffee liquid can be tasted directly, and the taste will be very rich and strong. You can appropriately pair it with milk and other mixers according to your preferred taste.
