From the picture, we can see that the moka pot is divided into upper and lower structures, mainly composed of three parts: the upper chamber that holds the coffee liquid, the filter basket that holds the coffee grounds, and the lower chamber that holds water. When using a moka pot to extract coffee, a heat source is used to heat the water in the lower chamber to generate steam pressure. Once the pressure is sufficient, it pushes the hot water upward, permeating the coffee grounds to bring out soluble aromatic substances, and continues to break upward, resulting in a cup of rich and mellow coffee liquid. In order to showcase the crema of moka pot coffee, here we use Front Street Classic Italian Blend (Brazilian coffee + Indonesian Mandheling coffee + Vietnamese coffee). The grind size for a moka pot is generally slightly coarser than espresso grounds, and much finer compared to pour-over. If the grounds are too coarse, the contact area between water and coffee grounds is smaller, which will not only lead to insufficient extraction and a weak taste, but also cause the liquid to burst out due to too little resistance as it flows upward, posing a risk of splashing and burns. Front Street recommends a grind size of EK-43s #3-3.5 setting, which feels slightly finer than caster sugar.


1. Add hot water to the lower chamber, keeping the water level at about 0.5 cm below the pressure relief valve (safety valve). Front Street has measured that the water volume at this position is about 100 g. When the coffee grounds are leveled in the filter basket, it is about 20 g, so the coffee-to-water ratio will be around 1:5. Note that using cold water will increase the soaking time of the coffee grounds, causing over-extraction and bitterness. Therefore, Front Street recommends using hot water, which can also shorten the extraction time.

2. The grind size of the coffee grounds needs to be finer than pour-over coffee and coarser than espresso. You can refer to the size of the filter mesh gaps in the filter basket to ensure the coffee particles are filtered out. Gently pour the coffee grounds into the filter basket, and use your fingers to tap and level them evenly.

3. Put the filter basket back into the lower chamber, tighten the upper chamber, place it on the electric ceramic stove and start heating, waiting for the moka pot to heat up.

4. When you hear a hissing sound from inside the moka pot, turn the stove to low heat and open the lid of the upper chamber. At this point, you can see the coffee liquid and crema slowly flowing out.

5. When the coffee liquid in the upper chamber is half full, you can turn off the heat source and move the pot to the table, using the residual heat and pressure inside the pot to continue extracting the remaining coffee liquid. It should be noted that the moka pot uses metal parts, so try not to touch the body when it is heated at high temperatures to avoid burns.

6. The finally extracted coffee liquid can be enjoyed directly, and the taste will be very rich and strong. You can mix it with milk or other additions according to your preferred taste.
