A grind that is too coarse will make the puck's resistance too low, causing hot water to pass through too quickly and fail to extract enough flavor compounds, resulting in under-extraction; while too fine a grind will make the resistance too high, and hot water will accumulate in the filter basket for a long time without being able to get out. 1. Add water: First, add an appropriate amount of hot water. Hot water can shorten the time needed to bring the water to a boil, letting us get a cup of Moka pot coffee faster! (Front Street Coffee uses a double-serving single-valve Moka pot and added 130 ml)

2. Fill with coffee grounds: Fill an appropriate amount of coffee grounds into the filter basket, then place the 18 g filter basket into the lower chamber.

It should be noted that after pouring the coffee grounds into the filter basket, we should gently tap the basket. The purpose is to allow the coffee grounds to settle naturally downward, fill the gaps, and reduce the occurrence of channeling. After filling, simply level the surface of the coffee grounds with your finger. Note that if the coffee grounds used are too fine, it is best not to tamp them, because doing so will increase the resistance in the filter basket and make it even harder for hot water to pass through.


3. Tighten the upper chamber and lower chamber together: In this step, note that if hot water has been added, it is best to use a wet cloth for insulation to avoid burns.

4. Place on the heat source and start brewing: There is not much to say about this. Just place the Moka pot on a heat source that can conduct heat and heat it.

5. Turn to low heat and wait for the coffee liquid to emerge: When the Moka pot makes an obvious sound during brewing, it means that, driven by steam, hot water is about to flow out with coffee compounds, so at this point we need to lower the heat.


Otherwise, high heat will continuously produce steam, increasing the pressure, and then because the pressure is too strong, the hot water will flow out faster and fail to extract enough coffee compounds, ultimately making the whole cup of coffee taste thin and weak. So when the coffee liquid is about to emerge, it is best to lower the heat.

6. Stop heating and wait for extraction to finish: When half of the coffee liquid has come out, we should turn off the heat source, because the residual heat inside the Moka pot is already enough to "urge" out the remaining hot water.

7. Taste the coffee: When the Moka pot stops releasing liquid, we can pour out the coffee liquid and taste it!

If, when drinking Moka pot coffee, we taste a strong burnt bitterness, then it indicates over-extraction, and we need to appropriately reduce the amount of extracted liquid and end extraction earlier next time! If it tastes too sour and has some off-flavors, then it is very likely under-extraction, and the grind can be adjusted. If the grind cannot be adjusted, then we can increase extraction by slightly increasing the amount of water in the Moka pot.
