The Extraction Principle of Cold Brew Coffee

Cold brew coffee is produced by mixing coffee grounds and ice water in a certain ratio and then slowly extracting. Coffee made with the cold brew process has a lower sourness and astringency. The low-temperature conditions and the long contact time with the coffee grounds allow only small-molecule flavor substances to be extracted, such as floral and fruity notes, while larger-molecule flavor substances, such as smoky notes, are difficult to extract.

What are the flavor characteristics of cold brew coffee?

Low-temperature extraction and long extraction time are the two major characteristics of cold brew coffee, and they are also the two main differences between cold brew coffee and coffee extracted at high temperature. Coffee extracted at high temperature uses hot water to extract coffee beans, at a temperature between 85-93°C, and generally for no more than 3 minutes. Cold brew coffee itself can fully reflect the subtle flavor characteristics of coffee. Because its acidity is mild, its taste is sweet, its mouthfeel is bright, and its flavor is soft, it presents the flavor characteristics of specialty coffee origins.

1. Prepare 50g of Front Street Coffee Butterfly coffee beans and grind them into a relatively fine powder (80% passing rate through a No. 20 standard sieve).

2. Pour the ground coffee powder into a sealed bottle, add 400ml of room-temperature water and 100g of hard ice cubes.

3. Cover with the lid and shake evenly, then put it in the refrigerator for 12-14 hours for low-temperature slow extraction.

 4. After the time is up, use filter paper (or a filter mesh) to separate the coffee grounds. The resulting coffee liquid can be enjoyed immediately, or it can be refrigerated and consumed within 48 hours.

Materials needed: Front Street Yirgacheffe coffee drip bags, a sealed bottle, ice-water mixture

Coffee-to-water ratio: 1:10 (the net content of one FrontStreet Coffee drip bag is 10g)

1. Prepare a clean sealed container with a lid, tear open the outer packaging bag, take out the drip bag inside, tear open the opening of the drip bag, pour the coffee powder from the drip bag directly into the container, and keep the drip bag as a filter after extraction is completed.

2. The coffee-to-water ratio for cold brew coffee is 1:10. The net content of one drip bag is 10g, so prepare 100ml of ice water and pour it into the container.

3. Cover with the lid and shake evenly, then put it in the refrigerator for low-temperature extraction for 12-14 hours.

4. (After extraction is completed) Take out the drip bag, open its ears and hook it onto your favorite cup, then pour the cold-brewed coffee through the drip bag to filter out the coffee grounds, and it is ready to enjoy.

Coffee-to-water ratio: 1:10 / 1:6 (the net content of one FrontStreet Coffee cold brew pack is 10g)

1. Take out the Strawberry Candy coffee cold brew pack and lift up the string.

2. Place it into a cup/bottle. It is recommended to extract at a ratio of 1:10 per pack (one cold brew pack is 10g, add 100g of cold water; this is the ratio for drinking directly after extraction is completed), or it is recommended to extract at a ratio of 1:6 per pack (one cold brew pack is 10g, add 60g of cold water; this is the ratio for mixing the extracted coffee liquid with other drinks).

3. Cover with the lid, shake a little, and place it in the refrigerator to extract for 8-12 hours so that the coffee powder fully contacts the cold water.

4. After cold brew is completed, take out the cold brew pack and enjoy.
