Why Does Typica Coffee Matter in Yunnan?

Typica coffee is the oldest native Arabica variety, originating in Ethiopia and southeastern Sudan, and the first coffee tree in Yunnan was Typica, introduced by French missionaries and confirmed by genetic testing. It offers an elegant, clean cup with delicate aroma and good sweetness, but weak plants and low yields keep cultivation costs high.

Today most Yunnan plantings are Catimor, a hybrid of Arabica and Robusta chosen for disease resistance. Front Street has grown small lots of Typica in Lincang since 2013, showing plum, berry, brown sugar and black tea notes, while washed Catimor at 1,200 meters in Baoshan shows plum, melon and nutty tones.

The history of coffee cultivation in Yunnan can be traced back to the first coffee tree brought by French missionaries, which was genetically identified as the Typica variety of the Arabica family. However, today the most widely planted variety in Yunnan is Catimor—what story lies behind this? From the perspective of Front Street Coffee, this article sorts out the rise and fall of the two varieties, Typica and Catimor, in Yunnan, and explains in detail their respective flavor characteristics and current cultivation status. Since 2013, Front Street Coffee has cultivated a small amount of Typica in Lincang, Yunnan, presenting plum, berry, brown sugar, and black tea sweetness with natural processing; while the washed Catimor at 1,200 meters in Baoshan exhibits plum, melon and fruit aromas, and nutty notes. Regardless of the variety, scientific cultivation and proper processing are the keys to improving the quality of Yunnan coffee.

Did you know that the earliest coffee tree in Yunnan was introduced by French missionaries and was recorded at the time as Coffea arabica? Because the coffee beans are relatively small after the outer skin and pulp are removed from the fruit, Chinese people have customarily called it small-seed coffee.

Later, genetic testing confirmed that these coffee trees first rooted in Yunnan belonged to the Typica variety of the Arabica family. But puzzlingly, the largest planted variety in Yunnan today is Catimor, a hybrid of Arabica and Robusta. What exactly happened in between? Today, FrontStreet Coffee will take everyone through the past of these two varieties in Yunnan.

What is the Typica variety?

Typica is the oldest native variety of Ethiopia, originating in Ethiopia and southeastern Sudan. Multiple studies indicate that all current Arabica varieties can be traced back to Typica.

Because it has not been mixed with the genes of other varieties, Typica has the purest Arabica lineage. Its flavor is elegant, its mouthfeel is clean, and it has a delicate aroma and excellent sweetness.

However, its drawbacks are also obvious: the plant is weak, has poor disease resistance, produces few cherries, and the cultivation cost remains high. Yunnan mainly planted Typica in the early period, and even when China repaid its debt to Russia with coffee, the variety provided was Typica.

After the debt was repaid, the state no longer uniformly purchased coffee for export. In addition, Typica has high maintenance costs, and domestic coffee consumption demand was extremely limited, so many farmers cut down their coffee trees and switched to other crops. It was not until Nestlé took an interest in Yunnan's natural conditions and distributed Catimor, which has strong pest and disease resistance and higher yields, that coffee cultivation in Yunnan was revived.

Since 2013, FrontStreet Coffee has experimentally planted a small batch of Typica on mountain land at 1,300 meters above sea level in Lincang, Yunnan. The reason for choosing Typica is that FrontStreet believes specialty coffee should start from the source of the variety. As the earliest variety to enter Yunnan, Typica has adapted over more than a century, and its genes have already adjusted to the local terroir and climate. FrontStreet believes that to give Yunnan coffee a clean taste, one must start with the variety.

At present, the annual output of Typica cultivated by FrontStreet Coffee in Yunnan is about 600 kilograms. Traditional natural processing gives the coffee a fuller body and a slight fermented aroma. Using a 1:15 coffee-to-water ratio, medium grind, and 89°C water temperature for pour-over brewing, the flavor presents plum, berries, fermented aroma, brown sugar, and a black tea-like sweetness.

What is the Catimor variety?

Catimor was created in 1959, when the Portuguese crossed Brazil's Caturra with Timor to cultivate the highly disease-resistant Catimor.

Catimor does not have a pure Arabica lineage. It is a hybrid offspring of the Timor species (a cross between Arabica and Robusta) and Caturra (a Bourbon mutation), and therefore contains 25% Robusta genes. This also leads to its shortcomings in flavor: the aroma is not rich enough, and the overall bitterness is relatively heavy.

Lower-quality Catimor easily develops astringency and a harsh musty taste. However, because it does not require shade trees, is easy to manage, has low maintenance costs, and produces high yields, Catimor has become the mainstay of commercial beans. For a long time, Yunnan Catimor was the raw material source for Nestlé instant coffee. However, this was more related to the lack of scientific cultivation and proper processing at the time; these beans were usually grown below 1,000 meters above sea level.

In fact, as long as Catimor is grown above 1,200 meters, combined with scientific cultivation management and clean drying processing, using traditional natural or washed methods, Yunnan Catimor can also show a satisfying flavor.
