Which Coffee Making Skills Does the Clever Cup Need?
The Clever Cup is a pour-over dripper with a piston valve at the bottom. Pouring hot water closes the valve so the grounds steep fully; setting the dripper on a mug presses the base, opens the valve, and lets the coffee drain. Only grind size, water temperature, and time need attention.
A working recipe is 15 g of coffee at a 1:15 ratio with 93°C water, paired with a washed or natural single origin such as a Yirgacheffe natural red cherry. From folding the filter paper to cleaning up, the routine takes about ten steps and repeats reliably at home or in the office.
As a member of the pour-over dripper family, the Clever Cup is widely recognized in international competitions for its simple operation and consistent brewing performance, and has also become the brewing device of choice for many specialty coffee shops. For beginners just getting into pour-over, the Clever Cup requires almost no complex flow-control skills—just master the three variables of grind size, water temperature, and time, and you can easily replicate a good cup of coffee at home. This article will explain the working principle of the Clever Cup in detail, and use the parameters of 15g of coffee, a 1:15 coffee-to-water ratio, and a water temperature of 93°C, paired with Front Street Coffee Yirgacheffe Natural Red Cherry, to fully demonstrate the ten steps from folding the filter paper to cleaning, helping you consistently produce a clean, layered cup of coffee at the office or at home.

The Clever Cup is one of the many types of pour-over drippers. It has gained widespread recognition in the international coffee community and is also a designated brewing tool used by many specialty coffee shops. This device has a low barrier to operation, and pour-over beginners can quickly master it, making a decent cup of coffee for themselves at home. Cleaning it afterward is also quite hassle-free, making it one of the brewing devices commonly kept in a home coffee corner.
In this installment of Barista Training Diary, we'll introduce you to this device known as the lazy person's利器—the Clever Cup.
Today I'm sharing a complete tutorial on making coffee with the Clever Cup. In my opinion, the Clever Cup is one of the most stable ways to make fresh coffee at home or in the office. As long as you master the three variables of grind particle size, water temperature, and time, you can consistently produce a cup of coffee, and beginners can get the hang of it quickly.
What is the working principle of the Clever Cup?
The core of the Clever Cup's design lies in the piston valve at the bottom of the dripper. When hot water is poured into the dripper, the water pressure causes the piston valve to close automatically, thereby stopping the flow, and the coffee grounds can fully steep inside.
After steeping is complete, place the dripper on a mug. The base is pressed, which opens the piston valve, and the coffee liquid slowly flows into the cup.
It can be said that the Clever Cup combines the strengths of both the French press and the pour-over dripper: it provides the full-immersion environment of a French press while retaining the filtration function of a pour-over dripper.

Brewing tutorial
The parameters for this brew are as follows:
Coffee dose: 15g
Coffee-to-water ratio: 1:15
Grind size: fine granulated sugar
Water temperature: 93°C
The equipment you need to prepare includes:
Clever Cup (large size recommended)
Large fan-shaped filter paper (bleached preferred)
Electronic scale (can be omitted if inconvenient at the office)
Timer (a phone can substitute)
Coffee cup (mug, etc. all work)
Coffee grounds (freshly ground or pre-portioned)
Hot water (depending on the bean type, control the water temperature between 85°C and 94°C)
Once everything is ready, you can start making it.
① Fold the filter paper. Fold the crimped edge of the fan-shaped filter paper in alternating directions, then open up the filter paper after folding and pinch the two bottom corners with your hand to give the filter paper more three-dimensional shape, so it fits the dripper better.
② Wet the filter paper. Place the folded filter paper into the dripper and rinse it evenly with hot water. After the filter paper is wet, pour the water into the coffee cup to warm it. This removes the papery taste from the filter paper and also helps the filter paper adhere more snugly to the dripper.
③ Grind the coffee beans. Grind the coffee beans into grounds (skip this if you already have grounds). Adjust the grind size according to the roast level; basically, a particle size close to coarse granulated sugar will do.
④ Pour the coffee grounds into the dripper. Pour the ground coffee into the dripper and gently tap the dripper to distribute the coffee bed evenly.
⑤ Tare the electronic scale. Place the Clever Cup on the electronic scale and press the tare key to reset it to zero.
⑥ Start timing. Press the timer at the same time you begin pouring water to start timing.
⑦ Pour water quickly. Pour hot water quickly and evenly into the Clever Cup. Usually the coffee-to-water ratio is between 1:15 and 1:20. After pouring to the target water amount, put the lid on the Clever Cup.
⑧ Stir midway. When the timer reaches 1 minute 15 seconds, remove the lid and use a spoon or stirrer to gently push the coffee grounds floating on top down into the water. Once all the grounds are submerged, put the lid back on.

⑨ Remove the lid. When the timer reaches 3 minutes, open the lid and stir the coffee once more with a spoon or stirrer.
⑩ Filter. Place the Clever Cup on a mug, and the coffee liquid will begin to flow out. Once all the liquid in the cup has filtered through, remove the Clever Cup.
OK, after completing the above 10 steps, you can sit back and enjoy a cup of coffee. One more thing to mention! Cleaning the Clever Cup is especially easy—just throw away the filter paper together with the coffee grounds, rinse the body with clean water, and let it dry. It's just that hassle-free.
