What Defines Yirgacheffe Natural Red Cherry Coffee Beans?

Yirgacheffe Natural Red Cherry coffee beans come from the Aricha Estate at 2,300 meters in Ethiopia. They are processed naturally from hand-picked ripe cherries and taste of berries, lemon, strawberry, and fermented wine. The name traces to the Red Cherry Project started in 2007 by a Dutch green bean merchant, which paid above-market prices on the condition that only fully ripe cherries were picked.

The 2,300-meter altitude slows cherry maturation and concentrates sugars in the fruit. Natural processing dries the whole cherry around the seed, which is where the berry and wine notes develop. Roasting and pour-over parameters matter here: a curve built for sweetness and a careful V60 pour help express the floral and fruity layers without flattening the acidity.

The Yirgacheffe region is renowned for its bright, fresh citrus-lemon acidity, but it's not only washed beans that deserve attention here. Front Street Coffee's Yirgacheffe Natural Red Cherry coffee beans have won the favor of many coffee lovers with their complex flavors of berries, lemon, strawberry, and fermented wine aromas. These beans originate from the Aricha Estate at an altitude of 2,300 meters, processed naturally, and the name is linked to the Red Cherry Project initiated by a Dutch green bean merchant in 2007. This article, from the perspective of Front Street Coffee, systematically reviews the origin background of these beans, the operational logic of the Red Cherry Project, the natural processing workflow, and shares Front Street's roasting recommendations, cupping report, and pour-over parameters to help coffee enthusiasts fully understand this Ethiopian specialty coffee that combines aroma and sweetness.

Red Cherry Project

The name of Front Street Coffee's Yirgacheffe Natural Red Cherry coffee beans comes from the Red Cherry Project. So what exactly is the Red Cherry Project?

The Red Cherry Project was first conceived in 2007 by the largest green bean merchant in the Netherlands. Trabocca provided funding for production conditions at the origin, purchasing Ethiopian coffee cherries at above-market prices, but with the prerequisite that only fully ripe cherries must be hand-picked. Ripe coffee cherries are typically red and resemble cherries in appearance, hence they are also called "red cherries." This requirement sounds simple, but in practice it's not easy, because cherries on coffee trees do not ripen at the same time—the span can be as long as three months, making the picking work quite tedious.

Before the Red Cherry Project was implemented, Ethiopian coffee cherries for export were often of varying ripeness, all sent together to processing plants, which affected the coffee's flavor and made it difficult to present the best state to consumers. The Red Cherry Project purchases fully ripe cherries at higher prices, so coffee farmers earn more income, and quality flavors are guaranteed. This is also why Front Street Coffee's Ethiopian Yirgacheffe Natural Red Cherry coffee beans can be loved by coffee enthusiasts everywhere.

Additionally, according to Front Street Coffee's research of relevant materials, the Dutch company Trabocca, the promoter of the Red Cherry Project, has invested all profits from these years into its partner farms in Ethiopia. Trabocca emphasizes that this is a non-profit project, so only 4 people execute the Red Cherry Project, including the boss and secretary, with other administrative affairs supported by the parent company to compress expenses, and all profits returned to partner farms.

The Red Cherry operation currently covers various types including washed, natural, semi-washed, semi-natural, and experimental coffees, with main production areas including Yirgacheffe, Sidamo, Bonga Forest, Lekempti, Kembata, Illubabor, Harar, and Limu, and in 2011, the Golocha production area (near Harar) was added. These production areas each have their own flavor characteristics, fully demonstrating the diversity of Ethiopian coffee beans.

As mentioned in previous Front Street Coffee articles, even within the same region in Ethiopia, coffee flavors can show subtle variations due to microclimate differences. The Yirgacheffe region itself is located within the Sidamo region, but due to its unique citrus-lemon acidity, it was separately designated by the government as an independent region. Therefore, Trabocca's purchases from multiple well-known Ethiopian coffee regions are, in Front Street Coffee's view, a wise move.

Furthermore, according to Front Street's understanding, after receiving the coffee beans, Trabocca also conducts a second screening, with cupping quality tests performed by offices in both Ethiopia and the Netherlands, and farms that meet the standard can receive substantial bonuses. The cupping score must reach 88 points or above to be recognized as quality coffee under the Red Cherry Project. This mechanism effectively guarantees the outstanding flavor of Red Cherry Project coffee beans.

Yirgacheffe Region

As mentioned above by Front Street Coffee, Yirgacheffe was originally a small town in Ethiopia, located in the Sidamo province administrative region. This small town has been a wetland since ancient times, and its name in the ancient language means "settle down in this wetland" ("Yirga" means "to settle down," and "Cheffe" means "wetland").

At the same time, Yirgacheffe is also one of the highest-altitude coffee regions in the world, and a synonym for Ethiopian specialty coffee. Here, the altitude is 1,700 to 2,100 meters, with a cool and foggy climate year-round, spring-like throughout the four seasons. The terrain and unique cultivation system provide ideal conditions for the growth of specialty coffee beans. The Yirgacheffe region was originally an affiliated town of Sidamo, but due to its unique flavor, it was separately designated as a region, so Yirgacheffe represents not only a production area but also a flavor profile.

Processing Method of Yirgacheffe Natural Red Cherry Coffee Beans

As Front Street mentioned above, Yirgacheffe has a high altitude, very suitable for growing quality coffee beans. The Red Cherry Project coffee beans introduced by Front Street Coffee are produced in Yirgacheffe, with the difference being that they are naturally processed, so the flavor profile carries a richer aroma and fermented character.

Natural processing workflow:

Natural processing is one of the oldest and most traditional processing methods. After picking, coffee cherries are immediately dried in the sun, which is more common in areas with abundant sunlight or scarce water resources. For example, among all production areas in Ethiopia, nearly 70% of coffee cherries are naturally processed. After brewing practice, Front Street Coffee believes that compared to washed coffee, natural coffee has lower acidity, higher sweetness, and a clearer mouthfeel, but slightly less cleanliness. In terms of flavor, it presents more berry-like tones and more complex layers.

The natural processing of Yirgacheffe coffee beans involves screening usable coffee cherries, then placing whole coffee cherries with the flesh and skin fully intact on raised drying beds for sun drying. This high-intensity manual labor drying method isolates the cherries from contact with the ground, preventing earthy off-flavors during sun drying, resulting in exceptionally clean fruit flavors. After more than two weeks of sun drying, the dark brown coffee cherries are professionally stored, waiting for the flavors to fully mature. Only before shipment are the coffee beans taken out of the cherries, and the sweetness can be imagined.

The above is Front Street Coffee's compilation of relevant information about Ethiopian Yirgacheffe Natural Red Cherry, hoping to help coffee enthusiast friends who want to learn about these coffee beans. Next, Front Street will share Front Street Coffee's roasting, cupping, and pour-over data for these coffee beans, for the reference of all coffee enthusiasts.

Front Street Coffee Yirgacheffe Natural Red Cherry Coffee Bean Roasting Recommendations

Yirgacheffe Natural Red Cherry is roasted using a Yangjia 800N with a 600g charge: charge when the drum temperature reaches 200°C, set the damper to 3.5, after 1 minute adjust the heat to 160°C, keep the damper unchanged, adjust the heat once at 148°C, dropping to 130°C, roast until 5'03" at 151°C, when the bean surface turns yellow, the grassy smell completely disappears, and dehydration is complete, adjust the heat to 105°C, open the damper to 4; at the 8th minute, ugly wrinkles and dark spots appear on the bean surface, and the toast aroma clearly turns into coffee aroma, which can be defined as the prelude to first crack. At this time, listen carefully to the sound of the first crack. At 9'07" the first crack begins, reduce the heat to 70°C, open the damper fully (adjusting the heat must be done very carefully, not so low that there is no cracking sound), and discharge at 194°C.

Front Street Coffee Cupping Report

The wet aroma is like sweet syrup, like thick apricot nectar, wrapped in rustic honey or chocolate. On the palate, it is not intense, with medium body, like fruity black tea.
