How Should You Brew Grana Heirloom Geisha Coffee?

Front Street's Grana natural Geisha comes from Ethiopia's Guji region at 1,600 to 1,900 meters and is medium-light roasted. It shows strawberry jam, pineapple, black tea, and apricot notes with a brown sugar finish. Pour-over works well, and grind size, dose, coffee-to-water ratio, and water temperature are the main variables to adjust for a consistent cup.

The Grana processing station was completed in 2014 and is managed by Israel Degefa, with a growing area spanning 700 hectares and much of it still wilderness shaded by primeval rainforest. Cherries are hand-picked at uniform ripeness and dried on raised beds for 14 to 20 days. The bean also suits cold brew, moka pot, and French press.

This Front Street Grana Geisha comes from the Grana processing station in the border zone between Ethiopia's Kochore and Grana Abaya producing regions. The processing station was completed and put into operation in 2014 and is managed by Mr. Israel Degefa. The surrounding coffee-growing area spans 700 hectares, a considerable portion of which remains undeveloped wilderness with fertile soil and dense shade trees.

The rich soil and ample shade provided by the primeval rainforest give this Ethiopian heirloom Geisha a more diverse range of flavors. The picking stage relies entirely on manual selection of cherries at uniform ripeness, which are then placed on raised drying beds for natural processing, adjusted according to weather conditions, with the drying process lasting 14 to 20 days, ultimately yielding the Grana Estate natural Geisha in our cup.

Front Street Grana Estate Natural Geisha is medium-light roasted, giving it a more prominent overall balance. After grinding, one can faintly smell the aromas of strawberry jam and pineapple; on the palate, sweet and tart notes alternate, with black tea, apricot, and orange flavors coming through distinctly, while the finish carries a brown-sugar-like texture. It is not the kind of inaccessible, mysterious Geisha—instead, it comes across as approachable and easy to drink.

Front Street. Geisha Brewing Parameters:

To bring out the best in this elegantly flavored Front Street Grana Geisha, the brewing method is key. Geisha beans are relatively hard and tend to sink and clog the drainage holes, so the grind size is recommended to be controlled at about 80% passing rate on a Chinese standard No. 20 sieve, roughly equivalent to the particle size of fine granulated sugar.

For the dose, Front Street still uses 15g, paired with a small Hario V60 dripper, and the coffee-to-water ratio is recommended to be adjusted to 1:15. This serves two purposes: using slightly more water to maintain the extraction yield, and bringing the coffee concentration down to about 1.15%, which happens to be the optimal range for experiencing its flavors. The water temperature is kept at 91°C.

Since Front Street Grana Estate Geisha underwent natural processing at the green bean stage, the brewed black coffee's fruity notes are dominated by yellow peach, citrus, and guava, accompanied by white floral aromas and a honey-like clean sweetness.
