French press, not really, the cleanup and washing after brewing is too troublesome, just like, I can cook, but I don't want to wash dishes, yet I have to! At this point, there's a device that can solve our problem—Clever!! Dripper!!

The original Clever Dripper was manufactured and developed in Taiwan, China, and its appearance is basically a filter dripper plus a circular base.


Its usage is very simple: pour hot water to soak the coffee grounds, wait for a certain time to complete the soaking, then place it on any container, and it will automatically let the coffee seep out. For cleaning, just throw away the filter paper along with the coffee grounds, and rinse the body with water—it's that easy!


Its operating principle lies in the circular joint at the bottom of the dripper, where there is a rubber-made piston valve.

When water is poured into the dripper, the water pressure seals the piston valve to stop the water. After the soaking is complete and it's placed on a cup, the base is pressed, causing the piston valve to open, and the coffee slowly flows out through the four holes.

It's equivalent to installing a controllable drainage valve at the bottom of the dripper, a very clever design. Later, other coffee equipment manufacturers followed suit and developed similar controllable drippers.So it can be used for pour-over, or as a "lazy version" French press without pressing. Today, Front Street will briefly use the latter method to experience the clever usage of the Clever Dripper for everyone!


One thing to note: the Clever Dripper also requires filter paper. It's precisely because of the filter paper that the cleaning process after making coffee is so simple—lift the filter paper and throw the coffee grounds into the trash, and with no residue left, just rinse with water.


Then purchase the corresponding filter paper based on the model of your Clever Dripper. Front Street uses a large fan-shaped filter paper.

We need to prepare five things: Clever Dripper, filter paper, any coffee beans, hot water, any cup (the cup's diameter must not be larger than the base of the Clever Dripper, otherwise it won't trigger the valve on the base).

The coffee grounds should be ground to a normal pour-over hot brew consistency, about 80% passing through a No. 20 sieve. The amount of coffee depends on how much you want to drink. Front Street uses 20g of coffee, with a 1:15 coffee-to-water ratio.


First, place the filter paper and wet it.

Next, pour the coffee grounds into the wetted filter paper.

Use slightly higher temperature hot water for pouring. The hot water needs to be at 94°C. Front Street uses a 1:15 coffee-to-water ratio, so that's 300ml of hot water. Pour it all in at once, then start timing and wait for four minutes~

After four minutes, place the Clever Dripper on the prepared cup, and the coffee will filter out. Once filtered, shake it a few times and it's ready to drink~

Tasting time! Front Street uses Panama's Elida Estate. The flavors revealed by the beans are slightly inferior to pour-over, but the orange acidity is still very prominent, with peach sweetness and a slight raisin fermentation note.
