Clever Dripper and Coffee V60 Brewing Cup: Structure and Immersion Brewing

How does the Clever Dripper differ from a V60 brewing cup?

The Clever Coffee Dripper, made by Taiwanese company EK INTL, has a manual valve at the bottom. Set flat on a table, the valve closes and the grounds stay in immersion; moved onto a server, it opens and the coffee flows out. That extra immersion stage makes it more forgiving than a direct-drip coffee v60 brewing cup and easier for beginners to repeat.

The design came from the same brand's HandyBrew tea maker, and only Mr.Clever units are true Clever Cups. The guide covers grind size, water temperature, a full recipe, and steps using Front Street Costa Rica Monte Grande Estate Blueberry coffee beans, a good example of coffee beans for hand brew. Immersion extraction releases flavor compounds differently than pulse pouring, so technique matters less.

The Clever Cup is a coffee dripper with a manual valve at the bottom, developed by the Taiwanese company EK INTL, and its design concept comes from the same brand's tea-making device HandyBrew. When the valve is laid flat on a tabletop it closes automatically, preventing the coffee liquid from flowing down and creating an immersion state; when moved onto a container, the valve opens and the coffee liquid flows out. Compared with direct-drip drippers such as the V60, the Clever Cup adds an immersion extraction stage, is not affected by pouring technique, and is friendlier to beginners. This article sorts out the Clever Cup's construction principles, grinding degree and water temperature recommendations, and includes a complete brewing recipe and steps using Front Street Coffee's Costa Rica Monte Grande Estate Blueberry coffee beans.

A Complete Analysis of the Origin, Structural Principles, and Immersion Brewing Operation of the Clever Dripper

The Clever Coffee Dripper is a coffee filtration device launched by the Taiwanese company EK INTL. A manually controlled switch valve is installed at the bottom of its body, allowing users to freely adjust the immersion extraction time; the operating threshold is low and it is easy to master, which is exactly why it is called the "Clever Cup." Many drippers on the market with valve designs are also often sold under the name "Clever Cup," but strictly speaking, only those produced by the Mr.Clever brand count as true Clever Cups.

The idea for this dripper came from another tea-making tool under EK INTL, HandyBrew, and immersion extraction is precisely its most core feature. The Clever Cup generally consists of two parts, inner and outer: the outer part is the stand that supports the dripper, while the inner part is the body with the dense switch valve. When it is laid flat on a tabletop, the valve is pressed shut and the coffee liquid cannot drip down, so the grounds and water remain in an immersion state. Once immersion is complete, move the cup onto a server or cup, and the valve opens immediately, allowing the coffee liquid to flow out smoothly.

Compared with direct-drip drippers such as the V60, the Clever Cup has an additional immersion extraction process, that is, letting hot water and coffee grounds fully contact inside the cup. Immersion extraction is not easily disturbed by pouring technique, and for beginners it is easier to stably reproduce the coffee's basic flavors. The degree to which flavor compounds are released changes with water temperature, coffee-to-water ratio, grind size, and immersion time, ultimately affecting the coffee's flavor and strength.

When making immersion-style coffee with the Clever Cup, just as when brewing coffee with an ordinary dripper, for the same beans, the same water temperature, and the same coffee-to-water ratio, too coarse a grind leads to insufficient extraction and a flat, less layered flavor; too fine a grind easily leads to over-extraction. When the soluble matter has already been released and the coffee grounds continue to soak in hot water, unpleasant flavors such as bitterness are extracted, making the coffee's flavor muddled.

Front Street Coffee recommends that when using the Clever Cup to brew medium-light roasted coffee beans, choose a medium-fine grind (75%-80% passing through a No. 20 standard sieve); for medium-dark roasted coffee beans, choose a medium-coarse grind (65%-70% passing through a No. 20 standard sieve).

Regarding water temperature, too high a temperature accelerates flavor release and easily causes over-extraction; too low a temperature slows release and easily causes under-extraction. Front Street Coffee recommends that for the Clever Cup, use 90°C-91°C for medium-light roasted beans and 88°C-89°C for medium-dark roasted beans.

Referring to the SCA Golden Cup standard, Front Street Coffee conducted brewing experiments with different coffee-to-water ratios and drippers, and found that when using a 1:15 ratio, the coffee extraction yield generally falls between 17.79%-18.73%. Although by Golden Cup indicators this is only just up to standard, sensory testing shows that the flavor performance is very suitable and applies to the brewing of most coffee beans.

Below, Front Street Coffee uses Costa Rica Monte Grande Estate Blueberry coffee beans to demonstrate the immersion-and-filtration recipe. The parameters are: water temperature 90°C, coffee dose 15g, coffee-to-water ratio 1:15, medium-fine grind (75% passing through a Chinese standard No. 20 sieve).

① Place the folded filter paper into the Clever Cup, set the cup on a container, and wet the filter paper with hot water; this also warms the cup for later use.

② Move the Clever Cup onto an electronic scale (at this point the valve closes automatically), and pour the ground coffee into the center of the dripper. For the first pour, add 30g of water, press the timer, and bloom for 30 seconds; after blooming ends, continue pouring water until 225g, then immerse for 1 minute 50 seconds.

After immersion is complete, move the Clever Cup above a container, the valve opens, and let the coffee liquid in the cup filter out; this process lasts about 15 seconds, and the total coffee extraction time is 2 minutes 05 seconds.

Because immersion extraction is used, the coffee strength can be changed according to personal preference by adjusting the coffee-to-water ratio or the immersion time. Coffee brewed with the Clever Cup has relatively high clarity, good body, and a soft, rounded sweetness.
