What is arabica coffee beans and how does Yirgacheffe show it?
What is arabica coffee beans? Arabica is the species grown across Ethiopia, and Yirgacheffe is one of its flagship regions. The town sits at about 1,700 to 2,100 meters on old wetland, and its name comes from local words meaning settle down in this wetland. Light roasting gives lemon, floral and honey notes.
Yirgacheffe trees are mostly grown in household backyards or mixed with other crops, so each farm yields little. Mist, steady rain and mild temperatures suit the arabica bean, and the natural processing method, sun-drying the whole cherry followed by careful sorting, builds the fruity aroma and sweetness the region is known for.

Yirgacheffe coffee refers to coffee produced in the Yirgacheffe area of Ethiopia. Yirgacheffe itself is the name of a small town, located at an altitude of about 1,700 to 2,100 meters. This area has been wetlands since ancient times. In the local ancient language, "yirga" means "settle down," and "cheffe" means "wetland," so together it means "let us settle down in this wetland." Today, Yirgacheffe has developed into a flagship specialty coffee region of Ethiopia.

Characteristics
Although the beans of Ethiopia's Yirgacheffe coffee are on the smaller side, they naturally carry a gentle, sweet character. As the birthplace of coffee, Ethiopia has thousands of years of cultivation history and processing heritage, giving rise to high-quality washed Arabica beans. After light roasting, the coffee presents lemon, floral, and honey-like sweetness, with soft fruit acidity and citrus notes, and a clean, bright mouthfeel.

Cultivation
Most local coffee trees are planted in farmers' own backyards or mixed with other crops in farmland, with limited output per household, making it a typical garden-style coffee cultivation. These mountain villages are shrouded in mist year-round, with a spring-like climate in all four seasons, cool and not stuffy summer breezes, abundant rain but not damp, and little cold damage in winter. It is precisely this environment that nurtures Yirgacheffe's unique citrus and floral "taste of place."
Flavor
The so-called "Yirgacheffe flavor" refers to intense jasmine floral notes, lemon aromas, and peach- and almond-like sweetness along with tea-like notes.
My tasting impression can be summed up in one sentence: when the coffee enters your mouth, a hundred flowers bloom! It is as if flowers blossom on the taste buds and in the nasal cavity, bringing a sense of comfort. In addition to floral notes, the delicate body is like silk massaging the mouth, a truly wonderful tactile sensation.

Processing
Traditionally, Yirgacheffe has always used the oldest natural sun-drying method. But in 1972, in order to improve quality, Ethiopia introduced washed processing techniques from Central and South America, making Yirgacheffe's jasmine and citrus notes clearer and more refined, propelling it into the top ranks of the world's specialty beans. The superb washed processing played an indispensable role. After the 1970s, this region was mainly washed, becoming Ethiopia's hottest washed-bean producing area.
However, in the past two years, Yirgacheffe has broken with convention and frequently released stunning natural beans, becoming a rising star in the specialty coffee market!
Naturally processed Yirgacheffe has strict standards for picking red cherries (the fruit borne by coffee trees). Before drying, unripe green cherries or defective fruits are removed by hand, and during the sun-drying process, damaged or moldy fruits are removed again. After two weeks, the sugar and essence of the pulp have fully penetrated into the coffee beans, and the moisture content drops to 12%. Then the hardened pulp, pectin layer, and pod are scraped clean together with a hulling machine. After the coffee beans are removed, they still undergo density and bean-color testing. After eliminating defective beans, workers finally remove any missed defective beans by visual inspection. This multi-layered quality control creates the clean, refined character of Yirgacheffe natural beans, along with a rich, captivating fruity aroma.
Front Street Coffee suggests that if you want to experience the unique charm of naturally processed Yirgacheffe, you can choose light-roasted single-origin beans and brew them by pour-over, with water temperature controlled at 90-92°C and a coffee-to-water ratio of about 1:15, which can better present its floral and fruity sweetness.
