Many friends who are new to specialty coffee, after realizing for the first time that coffee can actually have acidity, often blurt out a question: which coffee has the highest acidity? Kenyan coffee is clean and refreshing on entry, with a solid, full body and bright, prominent fruit acidity. Many who have tried it are completely won over just like that.
Coffee Growing Conditions
Kenya is located in East Africa, with the equator passing through its center and the East African Rift Valley running north to south. The country is mainly plateau terrain, with an average elevation of about 1,500 meters. Africa's second-highest peak, Mount Kirinyaga (Mount Kenya), reaches 5,199 meters and is covered in snow year-round.
Kenya is a tropical producing region with two rainy seasons each year, corresponding to harvest periods from October to December and June to August. The coffee-growing belt is mainly concentrated in volcanic soil areas at elevations of 1,600 to 2,100 meters. The moderately high altitude lengthens the ripening cycle of coffee cherries, allowing the beans to fully accumulate aromatic compounds, resulting in prominent fruit acidity and harder bean density.
Coffee Growing History
Kenya's neighbor Ethiopia has long been known as the "birthplace of coffee," but Kenya's coffee-growing history did not begin until the late 19th century. In 1893, missionaries brought Bourbon from Brazil to Kenya. In 1895, Britain colonized Kenya, designating it the "East Africa Protectorate" and taking control of all crops, including coffee.
Between 1900 and 1933, the colonial government established the Coffee Board (CB), responsible for licensing, inspection, and promotion of coffee. In 1934, auctions became one of the sales methods for Kenyan coffee, while the first formal coffee auction was not held until September 1935. In 1946, the Coffee Marketing Board (CMB) was established and became fully operational on July 1, 1947, but the agency was abolished in 1971.
Introduction to Kenya's Coffee Producing Regions
There are 10 main coffee-producing regions in Kenya: Nyeri, Murang'a, Kirinyaga, Embu, Meru, Kiambu, Machakos, Nakuru, and Kisii.
【Nyeri】
The Nyeri producing region is located in central Kenya and is home to Mount Kenya, an extinct volcano. Its fertile red volcanic soil provides ideal conditions for cultivating Kenya's top coffees. The region is dominated by cooperatives made up of smallholder farmers, while large estates are rare. Growing elevation ranges from 1,200 to 2,300 meters.
【Murang'a】
The Murang'a producing region is under the administration of Central Province and has about 100,000 coffee farmers. This was one of the first places where missionaries chose to settle. Murang'a also has fertile volcanic soil, and there are more smallholder coffee farmers than estates. Growing elevation ranges from 1,350 to 1,940 meters.
【Kirinyaga】
The Kirinyaga producing region is located east of Nyeri, and its volcanic soil is similarly fertile. Coffee produced by smallholders is relatively common in the area, and processing plants also produce quite a few coffees of excellent quality. Growing elevation ranges from 1,300 to 1,900 meters.
【Embu】
This producing region is adjacent to Mount Kenya, and the name Embu comes from Embu town. About 70% of the local population is engaged in small-scale farming, and almost all coffee beans come from smallholders, with relatively limited output. Growing elevation ranges from 1,300 to 1,900 meters.
【Meru】
Coffee from the Meru producing region is mostly grown by smallholders on the slopes of Mount Kenya and in the Nyambene Hills area. The name Meru comes from the local Meru people. The Kiambu producing region is located in central Kenya and is dominated by large coffee estates. However, with ongoing urbanization, the number of estates has continued to decline. Coffee from Kiambu is usually sold under sub-region names such as Thika, Ruiru, and Limuru. There are also a considerable number of smallholders in the area. 【Machakos】
The Machakos producing region is a relatively small county in central Kenya, named after Machako town. Coffee production in this region consists of both estates and smallholders. Growing elevation ranges from 1,400 to 1,850 meters.
【Nakuru】
The Nakuru producing region is located in central Kenya and has the highest-elevation coffee-growing areas among the central producing regions. Some coffee plants grown at high altitude stop growing due to dieback. The region's name comes from Nakuru town. Growing elevation ranges from 1,850 to 2,200 meters.
【Kisii】
The Kisii producing region is located in the southwest of Kenya's coffee-producing areas, near Lake Victoria, and is relatively small. Coffee in the area mostly comes from joint cooperatives formed by independent small producers. Growing elevation ranges from 1,450 to 1,800 meters.
Kenya's Coffee Grading System
Friends who have followed Front Street's content on Kenyan coffee will easily notice the presence of Kenya AA. Kenya developed its coffee economy during the colonial period, and the entire system leaned toward refined management. Whether in selection and breeding, grading, or processing methods, Kenya was ahead of many producing countries at the time. It was only decades later, when other countries also recognized the advantages of refined management and followed suit, that Kenya's unique dominance gradually faded.
1. Classified by size, shape, and weight
E: elephant bean, above screen 18 (including round beans), includes large round beans, and like PB, relatively small in quantity
AA: screen 17-18
AB: screen 15-16, a mix of grades A and B; above screen 17 (6.8 mm) is grade A, and above screen 16 (6.3 mm) is grade B
TT: light beans screened out from AA and AB by an airflow separator
PB: above screen 15, round beans, peaberry, accounting for about 10% of Kenyan coffee
C: screen 12-14, as well as light beans screened out from PB by an airflow separator
T: below screen 12, with more defective beans, broken beans, and light beans
HE: grades outside the above are called HE (Hulled Ears)

Reasons Behind the Flavor Characteristics of Kenyan Coffee
Beans from Central and South America usually ferment in washing tanks for no more than 36 hours, while Kenya's washing time is as long as 72 hours. After 30 to 48 hours of fermentation, the parchment beans are removed from the tank. By then the mucilage on the bean surface has been completely removed, but they still need to be soaked in clean water for 24 hours. After cupping many beans, Front Street found that this additional fermentation step should be related to the bright, clean flavor characteristics of Kenya AA coffee.
How to Drink Kenyan Coffee?

For brewing light-roast coffees like Kenya Asaliya, Front Street believes there are three details to pay attention to:
1. Prefer a filter cup with fast flow. Light-roasted coffee beans expand less and the bean body is relatively hard, making it easy to produce very fine powder during grinding. After pouring water, these fine particles sink to the bottom first, causing clogging in the final stage, and the resulting coffee often has a flat aroma and a muddy mouthfeel. Therefore, it is best to pair it with a faster-flow filter cup, such as the V60 most commonly used by Front Street. Its spiral rib design helps coffee grounds release gas while maximizing the volatilization and dissolution of aromatic and acidic compounds, and the large holes at the bottom further speed up the flow of water downward.

2. Water temperature should not exceed 93°C, nor be below 90°C. According to Front Street's brewing experience, if you want to present bright, lifted acidity with a tea-like aftertaste, you can brew at 90°C-91°C; if you want the fruit acidity to be full and solid and the body to be enhanced, you can use a water temperature of 92°C-93°C.
3. The grind size parameter will affect changes in total time, so Front Street usually combines extraction time and coffee taste to judge whether the grind setting is appropriate. The method is actually very simple: if brewing 15 grams of coffee grounds with a three-pour method takes less than 1 minute 40 seconds, and the taste is sharply sour and thin, it means the particles are too coarse and extraction is insufficient; if it takes more than 2 minutes 20 seconds, and the coffee is bitter and astringent, heavy and dull, then it may be ground too fine and over-extracted.
As for the coffee-to-water ratio, Front Street believes 1:15 to 1:16 is fine. If you want the coffee to lean toward a rich oolong-tea, berry-like intensity, use 1:15; if you want to more clearly perceive white floral notes and citrus acidity, use 1:16 to let the flavors spread out more.
For the first pour, add 30 g of water and bloom for 30 seconds. Start timing as you pour, using a small stream throughout, pouring from the center point and circling outward, making sure to wet the entire coffee bed. After 30 seconds, use a slightly larger but steady stream to pour the second stage of 95 g of water, with the aim of lifting the entire coffee bed. The stream should be poured vertically and evenly. At this point the scale should read 125 g, and the pour should be finished in about 55 seconds.
When the liquid level drops to the halfway point, begin pouring the third stage of 100 g using a small stream in a small circle, trying to keep the circling from becoming too wide so as not to disturb the coffee bed and cause underextraction. The final total amount of water added is 225 g, and dripping is completed in about 2 minutes.
For the first pour, add 30 g of water and bloom for 30 seconds. Then pour the second stage up to 125 g to create separation. When the water level drops to the point where the coffee bed is about to be exposed, pour the third stage until reaching 225 g and stop pouring. Wait for the water in the filter cup to drip completely into the server, then remove the filter cup. Total extraction time is 2'00".
