The Cerrado is actually a savanna covering 22% of Brazil's total area, located deep in Brazil's interior; Cerrado means "closed place" in Portuguese. The Cerrado savanna stretches from Mato Grosso state in southwestern Brazil, through the central-west of Minas, all the way to western Bahia state. The Cerrado coffee region referred to by Front Street is not the entire Cerrado savanna, but specifically the coffee-growing zone in the central-west of Minas state above 1000 meters in altitude — only this area can bear the name of the Cerrado coffee region. This area belongs to the prime section of the Cerrado savanna, with high altitude and fertile soil, thus producing specialty coffee beans that are sweet, rich, and high in cleanliness.

Coffee Variety

This Front Street Brazilian Cerrado coffee bean belongs to the Red Bourbon variety. Bourbon was introduced to Brazil around 1860 via Campinas in the south. Bourbon and Typica are both ancient varieties under the Arabica species. Bourbon coffee was first cultivated on Réunion Island, which was called Île Bourbon (le Bourbon) before 1789, and the coffee variety was thus named "Bourbon."

As equally ancient varieties, the difference between Bourbon and Typica is: Bourbon has broader leaves, denser plant growth, and about 30% higher yield than Typica. The beans are rounder and shorter, with berry-like acidity and a full-bodied feel, prominent cream and aroma, and strong acidic fragrance, but its disease resistance is also relatively weak.

After the Red Bourbon coffee tree flowers and bears fruit, the fruit color undergoes the following changes: green > slightly yellow > slightly orange > ripe red > darker red. Semi-Washed Processing Method

The semi-washed processing method first selects suitable coffee cherries, removes the skin, pulp, and part of the mucilage, retains a small amount of mucilage, and then dries them until the moisture content drops to 12%.

The semi-washed processing method is quite similar to honey processing. Front Street has several Costa Rican coffee beans known for honey processing. Honey processing is actually Costa Rica's redefinition of semi-washed, and Costa Rica has taken honey processing further in its precision, subdividing it into yellow honey, red honey, black honey, etc. Therefore, the term "semi-washed" is actually less widely known than "honey processed." The Kono dripper's feature is its immersion function, which extracts more coffee substances through immersion, thereby enhancing the rich mouthfeel. Its few ribs are positioned low, allowing the filter paper to cling tightly to the dripper wall, restricting airflow, slowing the water flow rate, and extending the contact time between water and coffee grounds.

The water temperature is set at 88°C, which is a relatively low brewing temperature, avoiding the extraction of excessive off-flavors during brewing. This is because the darker the roast, the more off-flavors increase accordingly.

Front Street uses staged extraction: first bloom with 30g water for 30 seconds, then pour in a slow circular stream until 125g and pause, wait for the water level to drop and about to expose the coffee bed, then continue pouring until 225g and stop, (timing from the start of blooming) total extraction time is 2 minutes.

Flavor description: Noticeable sweetness on entry, accompanied by a faint lemon aroma, containing rich nutty flavors, with a prominent dark chocolate note in the finish, overall a relatively rounded experience.
