Mandheling coffee has won over many enthusiasts with its rich flavor, steady aroma, and substantial body. Front Street is also a loyal fan of Mandheling, and today we will explore what kind of taste experience specialty-grade Mandheling can bring.

What is the definition of specialty Mandheling coffee?

Mandheling coffee is produced on the island of Sumatra, Indonesia, and is therefore also called Sumatra coffee. Most areas on the island are at low altitude and mainly produce commercial coffee beans; however, the higher-altitude Aceh Special Region and North Sumatra Province have highlands of 750 to 1,500 meters and are close to the equator.

This region has a typical tropical rainforest climate, with frequent rainfall throughout the year and consistently high air temperature and humidity, providing ideal growing conditions for Arabica varieties with excellent flavor. As Mandheling coffee became widely known, people gradually began to refer to Arabica beans produced on Sumatra collectively as Mandheling coffee. Based on different characteristics of the coffee beans, Mandheling can be divided into several types, the most common of which include Lintong Mandheling, Golden Mandheling, and Aged Mandheling.

Lintong Mandheling specifically refers to Arabica coffee from the mountainous areas around Lake Toba in North Sumatra Province. Lake Toba is an alpine freshwater lake located north of Medan, the capital of Sumatra, with an average lake surface elevation of about 900 meters. Lintong Mandheling is Mandheling in the traditional sense and belongs to the regular version. After wet-hulling, it presents the signature stuffy herbal aroma of Mandheling. For this reason, Front Street includes Lintong Mandheling in its daily staple bean series, allowing curious coffee lovers to appreciate the unique aroma of Indonesian coffee.

Golden Mandheling coffee is the exclusive signature product of PWN. Because the company registered the trademark "Golden Mandheling" early on, only Mandheling produced by PWN can be called "Golden Mandheling." The notable feature of this coffee is that the green beans undergo multiple rounds of screening, resulting in extremely outstanding overall quality. PWN purchases Mandheling green beans of 18 screen size and above, at G1 grade with fewer than 3 defective beans in a 300-gram sample, which is the highest grade for Indonesian green beans. Afterward, it strictly follows standards with 1 machine screening plus 3 manual sortings to remove defective beans, ensuring that the Mandheling coffee beans are consistent in color, shape, and size. Therefore, Front Street PWN Golden Mandheling tastes cleaner and more transparent, with more prominent body and sweetness.

Why is the wet-hulling method used?

Wet hulling is the most common green bean processing method in Indonesia, and its emergence is closely related to local climate conditions. Indonesia's humidity ranges between 70% and 90% year-round, typhoons can strike at any time, and annual rainfall even exceeds 2,000 millimeters. Under such harsh weather, it is simply impossible to carry out 2 to 3 weeks of sun-drying as in Africa; washed processing is not only time-consuming but also requires greater labor costs and water consumption, which mass-production-oriented Indonesia cannot afford. As a result, locals developed a unique semi-washed method—wet hulling.

Coffee cherries with the skin and pulp removed are put directly into a pool for brief fermentation of several hours. At this point, a small amount of mucilage still remains on the surface of the bean shell, and the mucilage is removed by scrubbing. The parchment beans are then dried. The first drying only needs to reduce the moisture content to 30% to 40%, taking about 2 to 3 days, after which the coffee farmers sell the green beans to collectors. The collectors directly hull the purchased semi-dry parchment beans by machine to obtain the innermost green beans.

Because the huller generates considerable friction during operation, it tears open the parchment layer clinging tightly to the green beans. During the friction and stirring process, the green beans are also easily crushed or bruised, especially at both ends, forming small gaps and producing goat-foot beans. The "naked beans" with the parchment layer removed dry very quickly, and once the moisture content drops to 12% to 13%, they can be bagged. Because the drying time is shortened, the degree of fermentation and acidity of the coffee beans are greatly reduced, but the body is correspondingly enhanced, with caramel and fruity notes especially obvious and a slight woody and herbal taste. This is precisely the classic "taste of place" of Sumatra coffee.

How should specialty Golden Mandheling coffee be brewed?

In order to highlight the high body of Golden Mandheling while retaining more herbal spice notes, Front Street roasters use a medium-dark roast. Freshly roasted Mandheling coffee needs 7 to 10 days of degassing and resting before entering its optimal flavor period. Front Street hopes that every customer who places an order can taste the full aroma in the coffee, so it only ships coffee beans freshly roasted within 5 days, ensuring that everyone can enjoy the complete optimal flavor period upon receipt.

After roasting, coffee beans expand in volume and become loose in texture, making them likely to absorb more water after grinding and accelerating the release of various substances. To avoid over-extraction, Front Street chooses a medium grind size and slightly lower water temperature, reducing the release of bitter large molecules from the extraction stage.

In this brewing session, the barista at Front Street Coffee hopes to highlight the full-bodied, clean, and aromatic qualities of Golden Mandheling, so a KONO dripper is chosen for extraction. Also a conical dripper, the KONO dripper has less than half the guide ribs of the v60, and its upper part is a smooth curved surface, allowing the filter paper to fit more closely. This restricts upward airflow, so hot water can only flow downward, creating a siphon-like extraction effect that allows the aromatic substances in the coffee grounds to be released more fully, thereby enhancing the full-bodied mouthfeel.

Golden Mandheling coffee pour-over parameters: 87–88°C water temperature, medium grind (70% passing rate on Chinese standard No. 20 sieve), coffee grounds: 15 grams, coffee-to-water ratio 1:15, three-stage pouring

First, wet the coffee bed with twice the amount of water as the coffee grounds, forming a dome and blooming for 30 seconds. Then pour in a thin stream in circles from the inside outward until 125 grams, pausing at that stage. When the coffee bed drops to half the height of the dripper, continue pouring the third stage in the same thin stream until 225 grams, then wait until all the coffee liquid has filtered through and remove the dripper. The total time is about 2 minutes. Finally, swirl the coffee liquid in the server to mix evenly and enjoy~
