The bright, uplifting fruit acidity of Kenyan coffee, combined with its full and striking mouthfeel, often leaves those who have tasted it unable to forget it for a long time. Kenyan Coffee Cultivation

SL-28 and SL-34. These are two of the forty varieties that resulted from the research program led by Guy Gibson of the Scott Laboratories. The laboratory cultivated and named them in 1930. According to SL laboratory botanists, SL28 and SL34 are genetic mutations. They account for the vast majority of Kenya's high-quality coffee production, though these varieties are susceptible to leaf rust. SL34 has French Missionary, Bourbon, and more Typica lineage. The bronze leaf color and broad bean-shaped beans have excellent sweetness, balance, and complex, ever-changing flavors, along with distinctive citrus and smoked plum characteristics.

Ruiru 11: In 1985, a global rust outbreak occurred, and Kenya developed this hybrid variety under those circumstances, prioritizing yield over quality. However, its flavor quality is far inferior to the earlier SL28 and SL34, and it has not gained traction in the specialty coffee world. Nevertheless, many even imported famous coffee suppliers mix this hybrid bean into blends to reduce costs.

Coffee Bean Processing Method: Kenyan 72-Hour Washed

Kenya adopts a repeated cycle processing method of fermenting and then washing. After harvesting, the same day, the finest coffee cherries are selected for pulping and fermentation. The fermentation time is 24 hours, and after 24 hours they are washed with clean river water. Then, they are fermented again with clean river water for 24 hours and washed again. After repeating this cycle 3 times, reaching 72 hours, it is called the Kenyan-style 72-hour fermentation washed processing method, abbreviated as [K72].

After the coffee cherries are harvested, they first undergo water-based density sorting. The principle is to use the differences in density and mass of the coffee cherries themselves for screening; high-density (heavier) coffee beans sink in water, while low-density coffee beans float. Fully ripe, high-quality coffee cherries have high density and are selected for further processing.

After selecting high-quality, sufficiently ripe cherries, the skin is removed, and they undergo washing and soaking so that the mucilage adhering to the outer layer of the green beans ferments. This process increases proteins and amino acids, and the acidity of the coffee beans thus develops a complex, delicate layered mouthfeel. Finally, all remaining mucilage is removed, and the coffee beans are moved to raised drying beds for sun drying.

For the AA and AB grades of green coffee beans, an additional special grading based on cupping results has been added (not officially recognized by the Kenyan government, established by exporters), from highest to lowest: TOP, PLUS (+), FAQ. The Kenya Asalia on Front Street Coffee's (FrontStreet Coffee) bean list has reached the TOP flavor grade. However, as mentioned earlier, this is not an officially recognized grading system, and not every Kenyan producing-region coffee bean that Front Street Coffee (FrontStreet Coffee) purchases carries a flavor grade, so there is no need to overly dwell on this.
