Be sure to pour slowly.   4. In order to extract the delicious components, let the swollen coffee grounds steam a bit more ( pause for about twenty seconds ) 5. For the second pour of boiling water, slowly pour from the surface of the coffee grounds. The amount of water poured must be consistent with the amount of extracted coffee liquid, keeping the water amount through the filter paper constant. 6. Stop when the extract reaches the number of servings; discard the filter paper while boiling water still remains inside.

         Coffee brewed with a flannel filter is rich and delicious, very ideal. The advantage of using a flannel filter is that there is no need to stir the coffee in the bag; all the coffee can come into contact with the boiling water, and after the coffee expands, foam emerges and it gradually filters downward. 1. Pour the required number of servings of boiling water into the lower chamber, then add dark roast finely ground coffee to the basket, about 6–8 grams per serving, pressing gently from above.
 
  2. Assemble the upper pot and basket with the lower pot. In particular, the upper pot must be tightened well.

         The main principle uses PV=nRT
         the ideal gas equation: at fixed volume, after heating, the vapor pressure of the boiling water pushes the boiling water through the glass tube into the upper layer to brew coffee, and after cooling, the lower layer becomes a near-vacuum state to draw back the brewed coffee from the upper layer, with the middle filter paper filtering out the grounds. [Brewing Method]

  Add hot water to the coffee cup, and put a little more hot water than N cups into the lower pot.
  1. First heat the lower pot to boiling.

  2. Then insert the upper pot (the water will rise when boiling at this point).

  3. When the water stops rising, remove the heat and stir the upper pot so that the coffee powder is evenly immersed in the water.

  4. Stir about five times, apply heat again, and start timing at this point.

  5. After about thirty seconds, remove the heat again, stir about five more times, then apply heat again (timing does not stop).

  6. When the total time reaches about one minute (stop timing) remove the heat and wipe the lower pot with a half-wet cloth (the water will immediately descend).
      

  7. When the water has completely descended, remove the upper pot, then put the lower pot back on the heat.

  8. After hearing three bubbling sounds, remove the heat and turn off the flame.

  9. Pour out the water from the cup that was originally filled with hot water, and pour in coffee to eight-tenths full.

  10. Then add seasonings according to personal preference.

      PS: For Blue Mountain, the total time is about 50 seconds; for others, about one minute. If it exceeds one and a half minutes, there will be a bitter burnt taste. The more you stir, the stronger and more sour it becomes; one stir is about one second.
