How do you brew Yirgacheffe Red Cherry at home?
Front Street Yirgacheffe Red Cherry is a natural-process heirloom coffee from Ethiopia, grown at roughly 1,850 to 2,100 meters under Operation Cherry Red. That project, run by Dutch trader Trabocca BV with Dutch government funding since 2005, works with smallholder cooperatives in Yirgacheffe, Limu, and Sidama and hand-selects fully ripe red cherries across several rounds to build micro-lots of about 1,500 to 3,000 kg.
For home pour-over, set water temperature, grind size, and the coffee-to-water ratio to suit the roast level, then pour in stages so the natural fruit sweetness stays clear. Cuppers stationed in the producing regions check each batch before it ships. Beginners can start with a moderate ratio and adjust grind until the cup tastes balanced rather than bitter or thin.
The Operation Cherry Red is an important quality improvement project in the field of specialty coffee in Ethiopia, and Front Street Yirgacheffe Red Cherry is precisely the natural-process representative under this project. This article will start with the origin and operation of Operation Cherry Red, gradually introduce the region information, processing method, and flavor characteristics of this bean, and provide suggestions on temperature, grind size, and coffee-to-water ratio for home pour-over. At the same time, it will also supplement some knowledge on the classification of honey processing, as well as the low-price sharing philosophy that the Front Street brand has always adhered to and the monthly event schedule. Whether you are a beginner just getting into pour-over or a veteran who wants to gain a deeper understanding of the natural flavor of Yirgacheffe, you can find practical references here.
Introduction to Front Street Yirgacheffe Natural Red Cherry
Introduction to Operation Cherry Red:
Operation Cherry Red, abbreviated as OCR, was initiated by the Dutch trading company Trabocca BV. It is a project aimed at providing producers with professional technical and related technological assistance, with a focus on improving the productivity and quality of coffee in remote areas of Ethiopia. Part of the funding for this project comes from sponsorship by the Dutch government, and since 2005 it has operated in the form of a quality improvement project for small-scale farms. The main targets selected are small coffee cooperatives at high altitudes in the three regions of Yirgacheffe, Limu, and Sidama.
The project encourages and assists producers in improving washed, semi-washed, natural, or other experimental processing methods as much as possible, in order to enhance coffee quality. At the same time, professional cuppers are arranged to be stationed in the coffee-producing regions to directly grasp the coffee flavor and ensure that each batch of output meets quality requirements. Before the harvest season, Trabocca invites selected smallholder producer organizations or producers to participate in the production of micro-lot coffee (about 1500-3000KG), and carefully hand-selects 100% ripe red coffee cherries in multiple rounds, hence the name Operation Cherry Red.
