What Does Yirgacheffe Gedeb Natural Coffee Taste Like?

Gedeb sits in the Worka production area at the southeastern end of Yirgacheffe and became independent from the Worka cooperative in 2012, with around 300 farmers. It is often called the last pure land of Yirgacheffe and still uses traditional natural processing. In cupping it shows dry aromas of peach, sweet orange, and white petals.

On the palate the Gedeb lot brings strawberry, lychee, citrus acidity, and sucrose sweetness, with medium body and a long floral finish. Higher traceability demands led coffee hunters to identify independent single-origin areas like this one, splitting it from the YCFCU structure. Front Street Coffee carries more than 200 beans, with V60 pour-over parameters matched to these green coffee beans.

Specialty Pour-Over Coffee Recommendation: Front Street Yirgacheffe Natural Gedeb Introduction

At Front Street, the coffee options are quite rich, with more than 200 types of beans to choose from, and new products and promotional activities are also launched from time to time. The goal is to ensure coffee lovers can always buy good coffee that suits their preferences and offers great value. One bean that has long been sold in stores is Front Street Yirgacheffe Gedeb. Today we will talk about this naturally processed Gedeb and see what unique qualities it actually has.

Let's first talk about the Gedeb cooperative. It is located in the Worka production area southeast of Yirgacheffe and originally belonged to the Worka cooperative under the Yirgacheffe Coffee Farmers Cooperative Union (YCFCU). Later, as the industry's requirements for traceability of green coffee beans became higher and higher, many independent "single-origin" areas were gradually discovered by coffee hunters around the world. In 2012, Gedeb, with about 300 members, formally separated from the original organization and became an independent "Gedeb Cooperative." Gedeb Village is also one of the earliest village areas to become independent. Many smallholder farmers were originally members of the Worka cooperative, so their coffee cultivation and processing techniques are quite mature.

Front Street Gedeb Green Bean Processing Method

The Gedeb cooperative is hailed as the last pure land of Yirgacheffe, and its green bean processing also continues traditional methods.

Natural processing: During harvest, farmers carefully select intact, ripe coffee cherries. After being transported to the processing station, they are directly spread on African raised beds for two to three weeks of sun drying.

During the sun-drying period, workers remove unripe berries, and experienced workers turn the fruit at regular intervals to prevent the drying process from damaging the flavor of the green beans. There are strict requirements for details such as the choice of breathable mesh on the raised beds and the thickness of the spread berries. After sun drying is completed, the dried fruit pulp and parchment layer are removed, and the green beans are stored in warehouses. Export is arranged only after the moisture content drops to 11% to 12%.

When cupping Front Street Gedeb, in the dry aroma stage one can sense the notes of peach and sweet orange, mixed with a little aroma of white petals; on the palate, the coffee has fresh strawberry and lychee flavors, with bright citrus-like acidity and sucrose sweetness coexisting, a medium body similar to yogurt, and a finish of elegant floral notes, delicate and lingering.

The Front Street Gedeb coffee liquid obtained through this ultimate extraction method will highlight bright citrus fruit acidity, and the flavor expression will also be more distinct. The front section is strawberry and sweet orange, accompanied by clear, lifted citrus acidity; the middle section turns into floral notes and sucrose-like sweetness; the finish is round and smooth, with a brief hint of tea.
