What Is Yirgacheffe Coffee and Why Does Terroir Matter?
Yirgacheffe is a town and coffee region in southern Ethiopia, and its coffees are typically washed, showing jasmine floral notes, citrus acidity, and a tea-like body. Huakui, by contrast, comes from the Buku Abel processing station in Guji, Sidama, and its natural processing brings strawberry, cream, and fermented wine notes.
Both are Ethiopian heirloom varieties, so the difference comes from terroir, cultivation patterns, and processing rather than genetics. Ethiopia sits on the East African Plateau with the Great Rift Valley running north to south and average elevations near 3,000 meters. Coffee trees there grow across varied altitudes, and the rainy season from June to September shapes each region's cup.
Ethiopia is a genetic treasure trove of coffee. Both Front Street Flower Chief and Front Street Yirgacheffe originate from local heirloom varieties, yet due to differences in terroir and processing methods, they present completely distinct flavor profiles. Front Street Flower Chief comes from the Buku Abel processing station in Guji, Sidamo, where natural processing brings strawberry, cream, and fermented wine notes; Front Street Yirgacheffe comes from Yirgacheffe town, where washed processing highlights jasmine floral notes, citrus acidity, and tea-like body. Many enthusiasts easily conflate the two. This article will systematically sort out the connections and differences between these two beans from origin background, cultivation patterns, processing methods, to actual brewing and cupping flavors, helping you make clearer choices when purchasing and brewing.

Anyone who has encountered specialty coffee knows that Ethiopia is a genetic treasure trove of coffee. Whenever Ethiopian coffee comes up, the first name that comes to most people's minds is Front Street Yirgacheffe. In recent years, another highly anticipated Ethiopian bean has emerged — Front Street "Flower Chief." However, many people may not be able to clearly explain the relationship between Front Street Yirgacheffe and Front Street Flower Chief.
Even if you can't tell them apart for now, it doesn't matter. Below, Front Street Coffee (FrontStreet Coffee) will help you sort out the relationship between Front Street Yirgacheffe and Front Street Flower Chief through this article.
Ethiopia
Ethiopia is universally recognized as the birthplace of coffee. Located in northeastern Africa, at the center of the Horn of Africa, it sits on the East African Plateau southwest of the Red Sea. The country borders Djibouti and Somalia to the east, Sudan and South Sudan to the west, Kenya to the south, and Eritrea to the north.
Ethiopia's terrain is dominated by mountains and plateaus, with the Great Rift Valley running through the entire country from north to south. The average elevation is close to 3,000 meters, earning it the title "Roof of Africa." Because the country spans a considerable range of latitudes and altitudes, although it is located in the tropics, temperatures vary dramatically from place to place. The big rainy season runs from June to September each year, the dry season from October to January, and the small rainy season from February to May. Rainfall distribution varies unevenly across seasons and regions, with localized droughts occurring from time to time. Temperatures range from 9.7°C to 25.5°C, with an annual average of about 16°C.
Coffee cultivation in Ethiopia is mainly concentrated in the western and southern regions, with over half using a smallholder farming model — so-called garden coffee — which is Ethiopia's primary production method. It is said that nearly 1.2 million households make a living from coffee cultivation, with each household's plot not exceeding 4 hectares. Garden coffee refers to farmers growing coffee trees mixed with other cash crops in their own backyards, usually alongside banana trees, creating a unique green landscape in front of and behind every household.
Because smallholder coffee production is extremely limited, farmer cooperatives or processing stations of various scales have emerged locally, specifically responsible for processing green coffee beans from that area. Each harvest season, farmers pick the cherries from their own coffee trees and deliver them to nearby processing stations (cooperatives) close to water sources for centralized processing, after which the coffee is sold under the processing station's name. For example, the Front Street Gedeb Cooperative coffee beans on the Front Street menu are collected from coffee cherries grown in Yirgacheffe town, delivered by farmers to the town for centralized washed processing, and finally produced and sold worldwide under the cooperative's name.
Production Regions
Ethiopia has nine major coffee production regions: Sidamo, Yirgacheffe, Harar, Limu, Gimma, Tepi, Bebeka, Lekempti & Gimbi, and Illubabor.
Here, Front Street will only introduce the two production regions involved in this article, namely Sidamo and Yirgacheffe.
【Sidamo】
Sidamo is located in southern Ethiopia. The region extends east to the Arsi and Bale administrative zones, and west to the Gamo Gofa administrative zone. Coffee in the Sidamo production region is grown at altitudes between 1,400 and 2,000 meters. The coffee flavors from this region are rich and diverse — different soil types, microclimates, and countless heirloom coffee varieties make the coffee from each town show明显的 differences and characteristics. Among them, Guji and West Arsi under Sidamo are the most widely known to the outside world.
Most coffee beans from the Sidamo region are processed using the natural method. Through repeated cupping, Front Street has found that the reason Sidamo coffee beans possess rich fruity aromas and smooth mouthfeel is precisely due to natural processing.
On the Front Street Coffee (FrontStreet Coffee) menu, Front Street Flower Chief comes from Guji in the Sidamo region. Coffee from the Guji production region differs from that of Yirgacheffe — its floral expression is more intense. After Hambela from Guji won the championship at the 2017 Ethiopia National Taste of Harvest Competition, Chinese green bean importers named this bean Flower Chief, as it carried intense strawberry and cream aromas at the time.
Front Street Flower Chief is a natural-processed bean from the Buku Abel processing station. The surrounding area where Front Street Flower Chief coffee is grown is full of sugarcane and bananas. Under high-altitude climate conditions, Front Street Flower Chief coffee has a smooth mouthfeel with passion fruit-like acidity. The natural processing method brings fermented wine notes to this bean.

【Yirgacheffe】
Yirgacheffe is a small town at an altitude between 1,700 and 2,100 meters. In its original name YirgaCheffe, Yirga means "to settle down," and Cheffe means "wetland." Therefore, Yirgacheffe YirgaCheffe means "let us settle down on this wetland." Yirgacheffe was once a sub-region of Sidamo, but because the coffee beans produced in Yirgacheffe and its production methods were so outstanding, Ethiopian coffee farmers took pride in their coffee having Yirgacheffe flavor. As a result, Yirgacheffe was separated and became its own production region. The word Yirgacheffe is not only the name of a production region but also synonymous with a coffee flavor.
Yirgacheffe coffee beans are known to everyone and are the gateway coffee for many coffee enthusiasts. This is all thanks to Yirgacheffe flavor. So what is Yirgacheffe flavor? It is intense jasmine floral notes, lemon or lime acidity, along with peach, almond sweetness, and tea aroma. As Han Huaizong described in "Specialty Coffee Studies": "Coffee enters the mouth, a hundred flowers bloom."
Compared to the impression of Sidamo coffee, Yirgacheffe mostly uses washed processing. Front Street Coffee (FrontStreet Coffee) believes that washed coffee has more pronounced acidity and better cleanliness, best highlighting the characteristics of Yirgacheffe. On Front Street's menu, the washed Yirgacheffe offerings include Front Street Worka, Front Street Kochere, and Front Street Gedeb. Among them, the Gedeb Cooperative that produces Front Street Gedeb beans became independent from the Worka Cooperative in 2012. Many members of the Gedeb Cooperative were originally members of the Worka Cooperative, so the coffee production techniques of the Gedeb Cooperative are naturally excellent.

Brewing Recommendations
In order to fully extract the fruity acidity of these two beans, Front Street uses a higher water temperature and finer grind size for extraction. However, to avoid over-extraction from high temperatures, a faster-flow dripper such as the V60 is used.
Front Street recommends brewing with freshly roasted coffee beans to experience the richest flavors of the coffee. The coffee beans shipped by Front Street Coffee (FrontStreet Coffee) are all within 5 days of roasting, because Front Street deeply understands the significant impact of freshness on flavor. Front Street's roasting philosophy is "Freshly roasted good coffee," ensuring every customer who places an order receives the freshest coffee. The resting period for coffee is about 4-7 days, so when customers receive it, it is at its optimal flavor.
Dripper: V60 #01 Water temperature: 90-91°C Dose: 15g Ratio: 1:15 Grind size: EK43s#10 (80% pass rate on No. 20 standard sieve)
Front Street brewing method: First pour 30g of water for a 30-second bloom, then pour 95g (electronic scale shows about 125g), completing the pour in about 1 minute. When the water level drops to 2/3 of the coffee bed, pour the remaining 100g (electronic scale shows about 225g), completing the pour in about 1 minute 35 seconds. Drip completes in 2 minutes to 2'10". Remove the dripper and extraction is complete.
