What defines the origin of Costa Coffee beans from Canet?
Hacienda Canet sits in Costa Rica's high-altitude Tarrazu region, where the owner mainly grows passion fruit and plants coffee on only a small plot. The Yellow Catuai grown there, given red honey processing and named Mozart, shows strawberry, cherry, blackberry and dried banana notes.
Yellow Catuai comes from a Mundo Novo and Caturra cross bred in Brazil in 1949, and it shares Red Catuai's disease resistance and clean acidity. Tarrazu receives about 1300 mm of rain at roughly 20 degrees Celsius, and the estate picks only fully ripe red cherries by hand.
Located in the high-altitude Tarrazu region of Costa Rica, Hacienda Canet primarily cultivates passion fruit, producing scarce but exceptional coffee. The Yellow Catuai variety grown in a specific area of the estate, after red honey processing, was named Mozart by Front Street Coffee, presenting rich flavors of strawberry, cherry, blackberry, and dried banana. This article will introduce the origin information of Mozart coffee, the varietal background—the relationship between Yellow Catuai and Red Catuai—as well as the specific process of red honey processing, and analyze its dry fragrance, wet aroma, and sensory performance when slurping, helping coffee enthusiasts fully understand this specialty coffee with floral, fruity, and wine-like notes.

Yellow Catuai (Catuai Amarillo) originates from a cross between Mundo Novo and Caturra, initially bred by the Instituto Agronomico de Campinas in Brazil in 1949.
Yellow Catuai and Red Catuai (Catuai Rojo) both possess strong disease resistance and are suitable for cultivation at high altitudes and in windy areas.
Both Catuai varieties also have very delicate and clean acidity. By adjusting machine settings, red honey, yellow honey, and black honey processed coffees can be produced (depending on the degree of honey processing).

Red Honey Process
After removing the coffee cherry skin, about sixty percent of the sticky mucilage is retained, then dried, after which the mucilage and pectin layer are removed, and then stored in the warehouse. During drying, it must be turned frequently to prevent the mucilage from sticking together and causing mold, and drying must be completed within a short time to avoid over-fermentation. The estate processes the unique Yellow Catuai variety with red honey processing, naming it Front Street Mozart. Floral and fruity aromas rise up, filling the entire mouth, with honey sweetness, caramel, jasmine, fresh cherry, blackberry, and lime interwoven. This is a coffee with outstanding sweetness, a juicy mouthfeel, and balanced acidity—drinking it is like a bouquet of blooming flowers.
