What defines Colombian coffee from Antioquia?

Front Street Colombia Secret Garden is a Supremo-grade washed coffee from Antioquia, grown above 1,400 meters from Typica and Caturra varieties at the Empresas de Antioquia processing plant, roasted between City and Full City. The cup carries the rich body and bright acidity typical of specialty Colombian coffee, plus vanilla and floral notes with balanced sweetness.

For pour-over, Front Street uses a medium-coarse 4.0 grind, 90 degrees water and a 16:1 ratio; siphon calls for a 3.5 grind, 16:1 and 40 to 50 seconds. Their shop recipe weighs 15g at a 5R grinder setting, roughly 60% passing a standard sieve, with 89 degrees water, a V60 dripper and about 1:15, poured in clockwise circles around the dripper center.

How to brew Front Street Colombia Coffee [Front Street Secret Garden] well?

Front Street Coffee (FrontStreet Coffee) pour-over reference: Weigh out 15g of [Front Street Secret Garden] coffee grounds, pour into the grinder for a medium grind; the ground particles should be slightly coarser than table salt. We use a BG grinder at setting 5R (60% passing a standard sieve), water temperature 89°C, extracted with a V60 dripper, with a recommended coffee-to-water ratio of about 1:15.

Using the center of the dripper as the pivot, pour the hot water from the gooseneck kettle in a clockwise circular motion, round after round. Start timing when brewing begins. Pour to 30g of coffee in 15 seconds, then stop pouring. When the time reaches 1 minute, begin the second pour. For the second pour, do the same as before: using the center of the dripper as the pivot, pour in a clockwise circular motion, round after round. Do not let the water stream hit the area where the coffee grounds meet the filter paper, to avoid channeling.

Pour until the coffee grounds reach the outermost ring, leaving one ring of space, then pour in circles back toward the center. At 2 minutes 20 seconds, bring the coffee to 220g, and brewing is complete.

Front Street Coffee (FrontStreet Coffee) iced pour-over [Front Street Secret Garden] reference:

Front Street Colombia Coffee [Front Street Secret Garden], light-medium roast, BG grinder setting 5M (67% passing a standard sieve)

20g coffee grounds, 150g ice, 150g hot water. Water temperature 1°C higher than the normally recommended 90°C for pour-over. For regular grind, use a Fuji Royal setting of 3.5; for iced pour-over, go half a step finer — Fuji Royal setting 3. Recommended coffee-to-(water + ice) ratio 1:15.

Bloom water amount 40g, bloom time 30 seconds.

Pour in stages: first pour 60g of water, second pour 40g of water. Use a relatively thin but tall pouring stream, with vigorous stirring and impact, so that the coffee grounds tumble fully. However, be careful that the water level does not get too high and does not hit the filter paper at the edge.

The entire extraction time is also about 2 and a half minutes (close to the usual extraction time for 20g of grounds).
