However, coffee beans are not necessarily better the fresher they are. In the first two days after roasting, because there is too much gas, the aroma has not yet stabilized, so it's fine to let them rest for 2–3 days before brewing and tasting.


If we have already bought coffee beans and want to quickly tell whether they are fresh, you can refer to Front Street's method: after opening the package, take a deep sniff of the coffee beans or ground coffee. If you smell a strong, pleasant aroma, that means the coffee beans are fresh enough; if the aroma is weak, it means they may have been sitting for a while and need to be finished as soon as possible. But if it not only lacks aroma but has even started to develop a rancid/oily smell, that means the coffee beans are no longer fresh. Please note that the oily smell I'm referring to here is a scent, not a physical appearance — coffee grounds that have sat too long mostly carry a smoky, kitchen-like note.

Sourness and bitterness are the two main flavor expressions of coffee today. Either the brewed coffee is mainly sour, or it is mainly bitter, and these two flavors correspond to light-roast and dark-roast coffee beans.
