The sun-dried processing method, as the name suggests, uses the sun to dry the red coffee cherries under direct sunlight for about a week, sometimes adjusting the duration based on conditions. After the skin and pulp are dried to a dark color, they are removed with a huller, and finally any defective beans are sorted out, completing the process.

The advantage of the sun-dried processing method is its low cost—no rent needs to be paid to the sun—making it the oldest and most traditional processing method. However, the downside is that it requires a large area to spread out the coffee beans for drying, and it is also unsuitable in regions prone to rain. Another drawback of the sun-dried method is that it is difficult to control exactly how much each bean has dried, so rough sun-dried batches tend to have slightly more defective beans. In terms of flavor and mouthfeel, because the drying process causes some fermentation in the pulp, sun-dried coffees usually have stronger fruity and winey notes, with slightly lower acidity.

The steps for processing specialty sun-dried Yirgacheffe are more refined than traditional simple sun-drying. Freshly picked red coffee cherries are manually sorted to remove defective beans and those that are overripe or insect-damaged, keeping only the good beans. They are then sent to a drying area for drying; of course, different producing regions use different drying racks, some using tarps, raised beds, etc., with the most common being African-style drying beds. The drying time generally takes 27–30 days, until the coffee turns dark purple and the moisture content drops to 11%, at which point it is considered complete. Sun-dried Yirgacheffe has a more intense flavor and richer layers, with winey fermented notes and higher sweetness.
