The Moka Pot is a tool used to extract espresso, widely used in European and Latin American countries, and is called an "Italian drip pot" in the United States.

The moka pot was invented in 1933 by the Italian Alfonso Bialetti. It brews coffee by heating the base, belongs to the distillation type, and is the most accessible of the machines for brewingespressocoffee, and is commonly used in Italian households. The extraction principle of the moka pot
 
The moka pot is a common coffee brewing device in European households. In 1933, Alfonso Bialetti invented the moka pot and it rose to popularity in Italy. Today it is even said to be a must-have in every Italian household, and the Bialetti moka pot also occupies half of the moka pot market.

The moka pot consists of three parts: the upper pot, the filter basket, and the base. The lower pot is the water reservoir, the filter basket is for holding finer-ground coffee powder, and the upper pot is for holding the extracted coffee liquid. The principle of the moka pot extracting coffee is very simple: it uses the steam pressure generated in the lower pot. When the steam pressure is great enough to penetrate the coffee grounds, it pushes the hot water up to the upper pot, brewing a rich and fragrantcoffee.
 


 

What coffee beans are suitable for brewing with a moka pot?

 
Since the coffee brewed with a moka pot has a relatively thick mouthfeel, dark-roasted coffee can better express that mellow richness. In addition, the crema of what we usually call espresso is actually composed of countless tiny carbon dioxide bubbles. Dark-roasted coffee beans contain more carbon dioxide gas. When brewing dark-roasted coffee beans with the pour-over method, you can find during the blooming stage that the degassing activity of the coffee grounds is very active.

Many people's idea of coffee brewed with a moka pot is mostly rich, fragrant, mellow, and full of crema. Therefore, the moka pot is suitable for brewing some darker-roasted coffee beans. Steps for Front Street Coffee (FrontStreet Coffee) to make a cup of espresso with a moka pot:
 
1/ Pour purified water into the lower pot of the moka pot; the water level should be about 0.5cm below the pressure relief valve.
 

 
2/ Choose a coffee grind size slightly coarser than espresso. You can refer to the size of the gaps in the filter basket's mesh to ensure the coffee particles will not fall into the lower pot. Slowly pour the coffee grounds into the filter basket, tap gently to distribute the coffee grounds evenly, and when the coffee grounds form a small hill shape, level the coffee surface by distributing the grounds.
 
Filling the basket with grounds is to avoid extracting undesirable defective flavors. Because the closer the density of the coffee grounds in the basket, the more it avoids some coffee grounds being over-extracted or under-extracted, which would lead to uneven flavor or a bitter taste.
 

 
3/ Put the filter basket into the lower pot, tighten the upper and lower parts of the moka pot, then place it on an electric ceramic stove and heat over high heat;
  
4/ When the moka pot heats up to a certain temperature, when you hear a clear "hissing" sound from the moka pot, set the electric ceramic stove to low heat and open the lid of the upper pot.
 

 

5/ When half of the coffee liquid has come out into the upper pot, turn off the electric ceramic stove. The residual heat and pressure of the moka pot will "push" the remaining coffee liquid into the upper pot.
 

 
6/ When all the coffee liquid has been extracted into the upper pot, you can pour it into a cup and taste it. The coffee extracted by the moka pot is very rich, and it can even extractCrema. You can also mix it with an appropriate amount of water or milk for a better flavor!

When filling the lower pot of the moka pot with water, pay special attention that the water level must not exceed the position of the pressure relief valve.
 


In addition, since the moka pot uses heating of the lower pot to generate steam, thereby pushing the hot water upward, because of the pressure involved, when using the moka pot to brew coffee, you need to pay attention to controlling the heat and the grind size.


The finer the coffee powder, the richer the coffee's flavor. This also gives rise to a question: when brewing coffee with a moka pot, what grind size is appropriate?


If you have the chance, you can observe the brewing basket of an espresso machine and the basket of a moka pot. You will find that the gaps in the moka pot basket are larger. To prevent coffee grounds from falling through the gaps into the lower pot, the grind size of coffee beans used for the moka pot needs to be coarser than that for an espresso machine, roughly between 0.3 mm and 0.55 mm.

Of course, it is extremely challenging for the human eye to directly measure the difference between such minute variations. The simplest way is to use a grind size ruler or moka-specific grounds for comparison and reference. In addition, you can also debug directly by hand. Judge the grind by observing the coffee liquid emerging from the upper pot: if the grind is too coarse, the coffee liquid will gush out like a fountain; if the grind is too fine, you may hear the "hissing" sound of water boiling, but no coffee liquid emerges.
