Later, people came to believe that the coffee beans produced around the town of Yirgacheffe had a unique floral aroma and citrus flavor, with a flavor profile different from coffee beans produced in other parts of Sidama. Many coffee traders also specifically requested beans grown in the town of Yirgacheffe. Therefore, in 2010, the Ethiopia Commodity Exchange separated the Yirgacheffe region from the Sidama region, which is how the Yirgacheffe region became known as it is today.

How do you brew drip bag coffee?


1. First, the net weight of the coffee grounds in a drip bag is clearly marked (usually 10 grams), so it solves the problem of not having a grinder or electronic scale.
 
2. Next, deal with the water amount and water temperature. As with pour-over coffee, use a ratio of 1:15 to 1:16, so the brewed coffee liquid should reach 140 ml to 150 ml. Use a water temperature of about 90°C. If you have a thermometer or temperature-controlled kettle, give priority to using it. If not, you can estimate the temperature roughly: generally, after the kettle comes to a boil, turn off the heat source, open the lid, and wait 2-3 minutes; the water temperature will reach about 90°C (at a room temperature of 28°C).

3. Once prepared, preheat the mug (cup), take out the drip bag and tear open the sealed opening along the "Open" line, spread out the two "ears" on both sides of the filter bag, hang it on the rim of the mug, and level the coffee bed.
 
4. For the first pour, simply wet the entire coffee bed completely and let it bloom for ten seconds.

5. After the bloom, make the second pour, using a small stream in a circular motion to fill it directly. Wait for the coffee bed to drop slightly, then continue pouring to full, repeating this until the coffee in the cup reaches about 140-150 ml, then you can remove the drip bag and enjoy it.
 
6. If you want a more precise water amount, you can also pour 150-160 ml of water into the pouring kettle. During brewing, after all the water in the kettle has been poured, wait for the coffee liquid to finish flowing into the cup, then remove the drip bag. The entire brewing process takes about 1 minute to complete.
