According to financial websites and foreign media reports, having previously seen various articles and pictures about the Brazilian drought online, well-known soft commodities expert Judith ·Ganes traveled to Brazil in December for an on-site investigation and stayed for 7 days in Minas Gerais, Brazil's largest coffee-producing region.

Ganes pointed out that although it is still impossible to estimate the specific production of Brazilian Arabica coffee next year, at the estates I visited, some places may suffer damage reaching 30%, some places 50%, and some places even as high as 100% (editor's note: damage does not refer to direct production reduction, but to the planted area affected by drought). At the same time, Ganes also said: "Having worked in the coffee industry for more than 30 years, the conditions of some estates shocked me. I have never seen anything so bad. The production-reducing effect brought by the drought is not only for 2021, but may also affect 2022."


During the 7-day trip, except that the situations in the two coffee-growing regions of Mogiana and Cerrado were slightly better, because these places have well-established irrigation systems and also carried out timely pruning of branches and leaves, the estimated production reduction was only between 10% and 30%, and a large part of this was also due to the off-year in production.
 

Brazil Cerrado coffee-producing region

|Brazilian coffee bean variety—Red Bourbon

Bourbon is a secondary variety produced by a mutation of Typica. Together with Typica, it is among the oldest existing coffee varieties. When the green fruit ripens, it turns bright red. Compared with Typica, Bourbon has broader leaves and denser growth. Although its yield is higher than Typica, its harvest period is also 2 years, so it is still considered a low-yield variety, yet it has a high-quality taste, with acidity resembling red wine and a sweet finish.

The coffee beans are relatively large in shape, uniform in size, and even and glossy in color. For ease of harvesting, farmers prune the coffee trees to no more than 150 cm.After a Red Bourbon coffee tree generally flowers and bears fruit, the color of the coffee cherries changes as follows: green > turning slightly yellow > turning slightly orange > turning ripe red > then turning darker red as it becomes more ripe. Therefore, some people also call it [Red Bourbon], but in fact Red Bourbon is simply what we generally call Bourbon. Bourbon planted at high altitudes usually has better aroma, while its acidity is brighter, and it even tastes somewhat like red wine.

 

|Brazilian semi-dry processing method (semi-dry processing)

The semi-dry processing method is a method between natural and washed processing, and can be further divided into two categories: pulped natural and honey processing. The two processing methods are basically very similar. Both first remove the skin of the coffee cherry as in washed processing, but skip the washed process of "tank fermentation and rinsing with clean water" and directly put the beans out in the sun to dry. Although the methods seem similar, because of one important difference, they create two very different flavors, which are worth explaining separately.

This processing method uses much less water than the washed method, and part of the method resembles washed processing (removing skin and pulp), while part resembles natural processing (without tank fermentation), so it is also called the semi-washed method. The introduction of the semi-dry processing method does not mean that all Brazilian producing regions use it. Cerrado, which has lower humidity, still mainly uses natural processing, and semi-dry processing is instead a supporting player in Cerrado. 4. For the first pour, use a circular motion to roughly wet the entire coffee bed in the drip bag (about 20ml of water), then stop pouring and wait quietly for 20 seconds.

5. After 20 seconds, pour again in a circular motion until it reaches 150ml.
