Yirgacheffe is a small town in southern Ethiopia, originally part of the Sidamo province. Later, because of its unique white floral aroma and citrus flavor, it left a deep impression on everyone who tasted it. Since then, Yirgacheffe has become independent from the Sidamo growing region, officially opening a new era of acidic coffee and becoming synonymous with Ethiopian specialty coffee. If you have not yet tried the legendary classic Yirgacheffe flavor, why not hurry and buy a bag of fresh Yirgacheffe and savor its wonderful taste?

In Ethiopia, if it is a single coffee farming household, it cannot carry out washed processing because expensive washing equipment and space are required. Therefore, if washed processing is to be carried out in Ethiopia, a washing station must be established, so washed processing is a very costly processing method in Ethiopia.

Yirgacheffe washed processing method: Use washing and fermentation to remove the peel, pulp, and mucilage, washing the coffee beans until they are smooth and clean. After washing, the coffee beans are still wrapped in the parchment layer, with a moisture content of 50%, and must be dried to reduce the moisture content to 12%; otherwise, they will continue to ferment and become moldy and spoiled. A better processing method is to use sun drying. Although it takes 1 to 3 weeks, the Yirgacheffe produced has an excellent flavor, with aromas of jasmine, citrus, orange, and lemon, and is quite popular.

To taste high-grade Yirgacheffe, we recommend Front Street. Washed Gudingding G1 and Front Street. Natural Red Cherry G1

Ethiopian green coffee beans are mainly graded by defect rate. The higher the grade, the cleaner the taste and the higher the aroma complexity. The green bean grades of Yirgacheffe are arranged by number. The smaller the number, the higher the grade and the better the quality. G1 is the highest grade, meaning there can be no more than 3 defects per 300g of green coffee beans. Front Street. Washed Gudingding and Front Street. Natural Red Cherry both belong to the G1 grade.

The name Gudingding comes from Gudingding Village in Yirgacheffe town. This is the earliest village area to be independently established, and many small farmers were also members of the original Worka cooperative, so their coffee production skills are beyond doubt. The Gudingding cooperative is called the last pure land of Yirgacheffe, so the green bean processing methods used are also very traditional (washed and natural processing methods). In terms of flavor, it not only has clear jasmine aroma and citrus acidity, but also has a honey-like sweetness.

By contrast, Front Street Red Cherry is a naturally processed G1 Yirgacheffe natural. After the fruit is picked, it begins the sun-drying process without processing. This is the oldest existing processing method. The drying process usually lasts about 4 weeks, and the processing method must be very rigorous to ensure that the coffee does not lose any flavor. Naturally processed beans have a complete natural mellow taste, gentle aroma, and a fuller body.
