What do fair trade coffee facts look like on a farm?

Finca Himalaya in El Salvador sits in the Santa Ana region, in the Apaneca mountain range at roughly 1,500 meters, and is managed by Aida Batlle, mainly growing Bourbon varieties. This lot of Red Bourbon and Typica was washed at the El Divisadero processing plant, then dried on African raised beds, giving red wine acidity, plum, brown sugar, a full body, and a long aftertaste.

Behind the cup is Project Origin, a green bean sourcing project started by 2015 World Barista Champion Sasa Sestic with his ONA Coffee team. It works directly with farmers in impoverished regions, improves production conditions, and pays 20 percent above Fair Trade prices. That structure aims to strengthen ties between roasters and farmers and support the fair trade of coffee.

About Project Origin

Sasa Sestic, the 2015 World Barista Champion, launched a green bean sourcing project called Project Origin three years ago together with his business team at ONA Coffee. The project works directly with coffee farmers in impoverished countries and regions, improves their production conditions, and gives them a purchase price 20% above Fair Trade prices.

The original intention of the project also included strengthening the connection between roasters and coffee farmers and guiding coffee farmers to grow high-quality coffee beans. To date, Sasa has established cooperative relationships with coffee growers from eight countries, including Brazil, Panama, India, Ethiopia, El Salvador, and Costa Rica.
