What Makes Yirgacheffe Red Cherry Coffee Distinct?

Yirgacheffe sun-dried Red Cherry is a washed-style region's counterpoint to natural processing, and it is often a first stop for new specialty coffee drinkers. The cup shows clear berry notes, bright lemon-like acidity, and fermented aromas, with a light roast profile built to hold the floral and fruity character in place.

Yirgacheffe sits in the Gedeo region of southern Ethiopia, at 1,700 to 2,100 meters, and was once part of Sidamo before its distinct processing and flavor earned it separate status. The area holds 28 member cooperatives of varying size, and coffee is mostly grown in household backyards or intercropped with other crops.

Yirgacheffe is often regarded as the entry point to specialty coffee, and Front Street's sun-dried Red Cherry is a representative that combines value for money with distinctiveness. This article starts from the region's terroir, grading system, and the origin and operation of the Red Cherry Project, systematically outlining the full picture of Front Street Yirgacheffe sun-dried Red Cherry coffee beans, and documenting in detail the light roast profile designed by Front Street's roaster to highlight the floral and fruity notes, as well as the final cupping performance, helping coffee enthusiasts fully understand the flavor source and quality logic of these beans.

In the specialty coffee circle, Front Street Yirgacheffe is often the top choice for beginners. The reasons are not complicated: first, the price is friendly—a half-pound bag of Front Street Yirgacheffe coffee beans costs about 80 to 90 yuan, offering outstanding value for money; second, the flavor is appealing—many people new to black coffee assume coffee should be bitter, but Front Street Yirgacheffe completely overturns that impression. Front Street Yirgacheffe Red Cherry has clear berry notes, bright lemon-like acidity, and is accompanied by fermented aromas.

Today Front Street will take you through a complete introduction to Front Street Yirgacheffe sun-dried Red Cherry coffee beans.

Front Street Yirgacheffe Coffee Unique Geographical Environment

Yirgacheffe is located in the Gedeo region of southern Ethiopia, a small town at an altitude of 1,700 to 2,100 meters. It was originally part of the Sidamo production area, but because local coffee processing methods differed and the flavor was highly distinctive, it gradually developed its own style and was eventually classified as a separate production area. Around it there are also three small production areas—Wenago, Kochere, and Gelena Abaya—whose coffees have flavors similar to Yirgacheffe, so Kochere is also included in the Yirgacheffe classification. The entire Yirgacheffe production area contains 28 member cooperatives of varying sizes, each with low output; coffee is mostly grown in household backyards or intercropped with other crops, a typical smallholder farming model.

The Yirgacheffe production area originally used the traditional African sun-drying method to process green beans. Later, the local government introduced washed processing technology from Central and South America. To improve coffee bean quality, washed processing gradually spread, making the coffee's acidity brighter and more lively, and its floral and fruity aromas fresher and more prominent. Front Street's Gutingting Cooperative is a typical example of Front Street's washed Yirgacheffe style: light white floral notes, bright lemon-citrus acidity, and a fresh green tea-like finish.

Yirgacheffe Coffee Bean Grading System

According to different green bean processing methods, Yirgacheffe can be divided into two major categories:

Category A is the washed processing method, with grading standards set by the Specialty Coffee Association of America (SCAA), divided into Gr-1 and Gr-2; the smaller the Arabic numeral, the higher the grade. Front Street G1 Yirgacheffe has a distinctive style, with citrus and floral notes integrated into the coffee liquid, a flavor many people find hard to resist;

Category B is sun-dried green coffee beans, graded as Gr-1, Gr-3, Gr-4, and Gr-5; likewise, the highest grade, Front Street G1 sun-dried Yirgacheffe, has rich fruity aromas. Opening a bag of freshly roasted Front Street G1 sun-dried Yirgacheffe coffee is enough to overturn everyone's preconceptions about coffee. Only those who have tasted the highest-grade Front Street sun-dried Yirgacheffe coffee beans will believe that coffee is essentially a fruit.

Due to green bean grading, Yirgacheffe green beans are not uniform in size. However, the variety itself belongs to local heirloom varieties (small beans), so most are between 14-15 screen size, relatively round in shape, and small in bean size.

The Red Cherry Project

When mentioning the "Red Cherry Project," many friends are familiar with the name. But when it comes to exactly what kind of project the Red Cherry Project is, perhaps only a few can explain it clearly.

[The Red Cherry Project] (ORC) is a project aimed at improving the quality of small-scale farms. In 2007, Dutch trader Trabocca and farmers in the producing areas jointly launched the "OPERATION CHERRY RED PROJECT," with the pure aim of incentivizing farmers to improve coffee bean quality. Each harvest season, Trabocca designates harvest plans for microclimate zones, hand-picking 100% ripe red coffee cherries, with output of about 1,500 to 3,000 kilograms.

The Red Cherry Project is also a reinforcing practice, pushing farms to invest more effort in the sorting and selection stage, and these coffees are also relatively higher priced. Red Cherry operations cover washed beans, sun-dried beans, semi-washed, semi-sun-dried, and experimental coffees, with main production areas including Yirgacheffe, Sidamo, Bonga Forest, Lekempti, Kembata, Illubabor, Harar, and Limu. In 2011, the Golocha production area (near Harar) was also added. These production areas have unique flavors that can fully express the flavor of Ethiopian coffee. After receiving the coffee, Trabocca also performs a second selection; through cupping quality tests at offices in both Ethiopia and the Netherlands, farms that meet the standard receive generous bonuses.

Trabocca provides financial loan support, new hardware equipment, and technical assistance in production and processing knowledge to help farmers raise their production level, and promises to purchase at a generous price as long as the actual output quality meets cupping standards in the cupping rooms in Addis Ababa, Ethiopia, and Amsterdam, the Netherlands. Trabocca's passing standard is 88 points.

After processing at the origin is completed, Yirgacheffe Red Cherry Project coffee is immediately packed in plastic inner bags (GrainPro bags or vacuum box packaging), then shipped to Djibouti to await ocean shipping. Through real-time monitoring, safe transport, and timely and appropriate handling, the pursuit of perfect quality is pushed as far as possible. Roasters can also buy high-quality coffee beans because of this Red Cherry Project, and Ethiopian coffee quality is thereby improved and obtains better prices. Trabocca returns profits to farmers, who then continuously improve and keep raising quality.

It is precisely because fully ripe red cherries give Front Street Yirgacheffe rich berry aromas that Front Street introduced them into Front Street Sunflower espresso blend. The fermented aroma of Front Street Red Cherry is not overwhelmed by Front Street Sherry coffee beans; the flavors are balanced and complementary, very distinctive. The aftertaste is long-lasting, with ample sweetness, rich chocolate aroma, vanilla, cream, and obvious vinous notes; the mouthfeel is clean and smooth, with medium body.

Roast Level

Because the aim was to highlight Front Street Yirgacheffe's original floral and fruity flavors, Front Street's roaster planned to use a light, slow roast to make the overall mouthfeel round and sweet, with rich flavor. To this end, Front Street designed three roast profiles, and after cupping, finally determined the most suitable curve, as follows:

Roaster Yangjia 600g semi-direct fire

Plan: Use a fast-roast mode. Charge when the drum temperature reaches 200°C, set the damper to 3.5, after 1 minute adjust the heat to 160°C, keep the damper unchanged, adjust the heat once at 148°C, lower to 130°C, roast until 5'03'', temperature 151°C, the bean surface turns yellow, the grassy smell completely disappears, dehydration is complete, adjust the heat to 105°C, open the damper to 4; at the 8th minute, ugly wrinkles and dark斑 streaks appear on the bean surface, the toast smell clearly turns into coffee aroma, which can be defined as the prelude to first crack. At this time, listen carefully for the sound of the first crack point. At 9'07'' first crack begins, reduce the heat to 70°C, open the damper fully (adjusting the heat must be very careful, not so low that there is no cracking sound), and discharge at 194°C.

Front Street Yirgacheffe Coffee Bean Cupping Results

Front Street Yirgacheffe's dry fragrance exudes a strong fruity aroma, with heavy dried-fruit notes of strawberry, mango, and apricot jam.

The wet aroma is like sweet syrup, like thick apricot nectar wrapped in rustic honey or chocolate. On the palate it is not intense, medium-bodied, with unobvious acidity yet lively and bright, like fruity black tea.
