How Does Fair Trade Coffee Production Shape Yirgacheffe Natural Aricha G1?
Ethiopia Yirgacheffe Natural Aricha G1 is a naturally processed, Grade 1 lot from the Kebel Aricha processing station, part of the Project Origin sourcing program started by 2015 World Barista Champion Sasa Sestic. Grown at 1,900 to 2,100 meters with heirloom varieties, it delivers intense berry and citrus aromas with a full body, and is brewed as pour-over.
Yirgacheffe is not a single farm but a group of communities and cooperatives, mostly washed, with a small share of cherries deliberately dried in the fruit to boost aroma and body. Smallholders farm garden plots and deliver limited volumes. That structure keeps lots traceable, a point often raised in fair trade coffee production talks and by fair trade coffee farmers seeking better returns.
Yirgacheffe is one of Ethiopia's most iconic specialty coffee regions, and its natural-process lots are highly sought after for their intense fruity aromas and rich mouthfeel. This article focuses on a natural G1 Yirgacheffe produced by the Kebel Aricha processing station, a lot that belongs to the Project Origin green bean sourcing program initiated by Sasa Sestic, the 2015 World Barista Champion. The article will guide you through Yirgacheffe's growing background, processing methods, and flavor characteristics, and share a complete set of pour-over brewing parameters. It also introduces related product information from Front Street Coffee, making it suitable for coffee lovers who enjoy bright acidity and berry notes.

The history of coffee cultivation in the Yirgacheffe region is quite unique. It was first introduced and planted by monks from European monasteries, which is somewhat similar to how Belgian monks cultivated wheat to brew beer. Later, cultivation gradually shifted into the hands of local farmers or cooperatives. Strictly speaking, Yirgacheffe is not a single farm, but a production area made up of multiple surrounding coffee communities and cooperatives, including Idido, Harfusa, Hama, and Beloya around the Misty Valley. These areas are dominated by washed processing, but a small number of exceptionally high-quality beans are deliberately given natural processing to enhance their alluring fruity aroma and rich body. These small mountain villages are shrouded in mist year-round, with a mild, spring-like climate, gentle summer breezes that are cool rather than hot, abundant rainfall without dampness, and little cold damage in winter. It is precisely these terroir conditions that create the region's distinctive flavor profile, woven from citrus and floral notes. Most coffee trees are planted in farmers' own backyards or intercropped with other crops in their fields. Each household produces only a limited amount, making this a typical garden-style coffee cultivation model. The award-winning Yirgacheffe beans almost all come from the villages and communities mentioned above.

About Project Origin
Sasa Sestic is the winner of the 2015 World Barista Championship. Three years ago, together with his business team ONA Coffee, he launched a green bean sourcing program called Project Origin. The core of the program is to collaborate directly with coffee growers in poor countries and regions, improving their production conditions on the one hand and purchasing at a level 20% above fair trade prices on the other. The original purpose of the project also includes deepening communication and connections between roasters and coffee farmers, and providing coffee farmers with technical guidance for growing high-quality coffee beans. To date, Sasa has established cooperative relationships with coffee growers from eight countries, including Brazil, Panama, India, Ethiopia, El Salvador, and Costa Rica.

This lot of Yirgacheffe comes from the Kebel Aricha processing station, which serves about 650 to 700 smallholder coffee farmers nearby. Farmers deliver their harvested ripe coffee cherries here for processing and receive cash on the spot. After the processing station sorts out the usable cherries, they are spread directly on raised beds to sun-dry. During the first few days of drying, workers turn the cherries every 2 to 3 hours to avoid over-fermentation. After a four-to-six-week sun-drying process, workers remove the outer fruit by machine according to weather and temperature conditions, and the beans are then transported to Addis for storage. Generally speaking, naturally processed beans are stored in parchment form until just before export, when they are hulled, in order to protect green bean quality. This lot of natural Aricha was rated G1, the highest grade, by the ECX. Whether in terms of green bean appearance, consistency, freshness, or dry aroma and flavor performance, it is quite outstanding. If you prefer bright acidity and intense berry flavors, this bean is definitely worth trying.
Yirgacheffe is divided into two major categories according to different green coffee processing methods:
Category A is the washed processing method, with grade standards set by the Specialty Coffee Association of America (SCAA), divided into Gr-1 and Gr-2. The smaller the Arabic numeral, the higher the grade. G1 Yirgacheffe has a distinctive style, and the flavor of citrus and floral notes blended into the coffee liquid is a deliciousness no one can resist;
Category B is green coffee processed by the natural method, with grades divided into Gr-1, Gr-3, Gr-4, and Gr-5. Likewise, the highest grade, G1 natural Yirgacheffe, is rich in fruity aroma. Opening a bag of freshly roasted G1 natural Yirgacheffe can overturn everyone's original understanding of coffee. Only those who have tasted the highest-grade natural Yirgacheffe will believe that coffee is a fruit..
