This batch of Yirgacheffe comes from the Kebel Aricha processing station, with about 650 to 700 smallholder coffee farmers in the surrounding area who deliver ripe coffee cherries here for processing in exchange for cash. After the processing station completes cherry sorting, the cherries are spread directly on raised beds for natural drying, and during the first few days they must be turned every 2 to 3 hours to prevent over-fermentation. After four to six weeks of sun drying, workers remove the surface pulp with machines depending on weather and temperature conditions, then transport it to Addis for storage. Natural beans are typically stored in parchment form until just before export when they are hulled, ensuring green bean quality. About Project Origin
Sasa Sestic, the 2015 World Barista Champion, launched a green bean sourcing program called Project Origin three years ago with his business team at ONA Coffee. The project works directly with coffee farmers in poor countries and regions to improve their production conditions and purchases at 20% above fair trade prices.
The original intention of the project is also to bring roasters and coffee farmers closer together and to guide farmers in growing high-quality coffee beans. To date, Sasa has established partnerships with coffee growers from eight countries, including Brazil, Panama, India, Ethiopia, El Salvador, and Costa Rica.
