Yirgacheffe is the guide that leads many coffee lovers into the world of specialty coffee. That cup, with its jasmine aroma and lemon-citrus acidity, often becomes the starting point of taste awakening. This article begins with the region's history, the smallholder cooperative model, and the differences between natural and washed processing, then focuses on the origin information and flavor profile of Front Street Coffee's Yirgacheffe Red Cherry natural beans, and provides the complete parameters and steps for a three-pour V60 hand brew, helping you brew a cup of Yirgacheffe that has both floral notes and juice-like character.

Many people's first encounter with specialty coffee begins with a cup of Yirgacheffe that carries jasmine florals and lemon-citrus acidity, and it is precisely this cup that opens the door to the world of specialty coffee for them.

Yirgacheffe was initially managed under Ethiopia's Sidamo production region. As its unique flavor gradually gained wider recognition, its fame grew, and it was eventually separated from Sidamo to become an independent production region. This small town is shrouded in mist year-round, with a mild, spring-like climate and gentle breezes. It is neither too hot nor too cold, rainfall is moderate rather than humid, and frost damage is rare in winter, providing ideal conditions for coffee trees to grow.

Unlike many specialty coffees produced on a large scale in estate form, Ethiopian coffee is mostly grown by smallholder farmers, each with usually only about 1 hectare of land and limited output. Therefore, after harvesting, the coffee cherries are sent to nearby towns or cooperatives for centralized processing. Unified cooperative management not only helps improve coffee quality but also allows farmers to earn more stable income.

When selecting coffee beans, we often see products named after cooperatives. They have already completed post-processing, grading, and roasting, such as Gotiti, Worka, Konga, and Adado.

As a globally renowned coffee region, Yirgacheffe still mainly uses the two traditional processing methods of natural and washed.

Historically, Yirgacheffe first used the oldest method, natural processing. It was not until 1972, when Ethiopia introduced washed processing technology from Central and South America in order to improve coffee quality, that the jasmine florals and citrus notes of Front Street Coffee's washed Yirgacheffe became clearer and brighter. The most fundamental difference between the two processing methods is that washed processing removes the fruit pulp, thus better highlighting the flavor of the coffee bean itself, while natural processing retains the fruit pulp, giving it greater sweetness and body. Front Street Coffee's Yirgacheffe Red Cherry Konga is a representative example of the natural process.

For naturally processed Yirgacheffe, the coffee cherries must first be fully ripe. During the first two days of natural processing, the moisture of the red cherries must be maintained so that the fruit sugars can fully initiate the fermentation reaction. At the same time, the high altitude where the processing station is located allows nighttime temperatures to drop to about 12°C, avoiding off-flavors caused by excessive fermentation due to overly high temperatures. When the temperature rises at noon, shade must be provided in time to prevent the red cherries from being sunburned. It is precisely these tedious steps that allow Front Street Coffee's natural Yirgacheffe to display rich florals, tropical fruit-like sweetness and acidity, and just the right amount of fermentation aroma.

In order to preserve the floral notes and juice-like character to the greatest extent, Front Street Coffee's Yirgacheffe Natural Red Cherry uses a medium-light roast. This roast level is more conducive to presenting its florals and fruity acidity. For brewing, a V60 dripper is recommended, and extraction should be done by hand pouring in stages.

The spiral ribs of the V60 dripper help the coffee grounds degas better and can maximize the volatilization and dissolution of aromatic acidic compounds, making it suitable for brewing the layered Front Street Coffee Yirgacheffe. As for the brewing ratio, Front Street Coffee believes both 1:15 and 1:16 work: choose 1:15 for a richer mouthfeel, or 1:16 to more clearly perceive the florals and sweetness, allowing the flavors to open up more.

Once coffee is ground, aromatic compounds dissipate quickly, and during brewing the good aromatic compounds are released first. Therefore, using a medium-fine grind (granulated sugar size, 80% passing through China's No. 20 standard sieve) with a relatively high water temperature, and pouring in a fast-then-slow manner, are all intended to better showcase its floral and fruity acidity, leaning the taste toward berries without losing honey-like sweetness, while avoiding the extraction of undesirable compounds in the later stage so as to maintain the cleanliness it should have.

Three-stage pouring: First, wet the coffee bed with twice the amount of water as the coffee grounds, forming a dome, and let it bloom for 30 seconds. Then pour in a small stream in a circular motion from the inside outward until reaching 125g, and pause. When the coffee bed drops to half the height of the dripper, pour the third stage in the same fine stream until reaching 225g. Once all the coffee liquid has drained, remove the dripper. The total time is about 2 minutes.

After the coffee from the dripper flows into the server, remove the dripper, gently swirl the server to even out the coffee liquid, and you can begin tasting the flavor of Front Street Coffee Yirgacheffe while it is hot.
